Chicken Leftovers

We roast a chicken weekly, make stock with the carcass and unless I make soup or sandwiches, the white meat is leftover. With other leftovers I tossed together white meat pieces, sour cream, sauteed mushrooms, cream of chicken soup, thyme, plus cooked pasta together with plain crushed Ritz crackers on top (no butter as mushrooms were sauteed in butter)and baked it. Surprisingly it was delicious, but lacked something to sort of cut the richness. Would you add cheese? Wine? A different creamed soup? Any suggestions because I definitely want to toss this together again. Many thanks.
