More steel...4 minute pizza...

Perfection ! This time I used the Sullivan Bread dough recipe. Stirred it up last night and this AM placed 4 dough balls in the fridge. At 3 PM took out 2. At 5 PM turned on oven to 550. with the steel 6" below the broiler. At 5:45 turned on the broiler to high. Stretched the first pizza and topped lightly. Had a wonderful experience sliding the pizza from peel to steel with Durum flour as the lube :) Works great and is the very first time I have had such success. As I put in#1 I turned back to oven 550. In 4 minutes pizza perfect. I then stretched next pizza and topped and when I slid it in left oven at 550 and at minute 3 turned the broiler back on for 1 min. Perfect. Great crust char on the bottom and crisp. No droop ! Tender and flavorful. I will use sourdough next time but this was a great trial run.
