What a good idea, trailrunner! I have pie crust in the frig now, made of lard and butter. Yours is much healthier :-)

Your DH"s pasta dough also sounds wonderful; are you offering that recipe? One of my fondest food memories is of the most delicious tagliatelle in a cream sauce with fresh fish dish we had in northern Italy--so good we went back the next two evenings and ordered the same!

lizbeth...yes it is nothing unusual. He does make sourdough pasta also but this was his regular recipe:

by weight: 237g AP flour ( or "00" we are out of the Italian flour)
3 g salt
3 large eggs
by measure: 1 1/2 c flour
1 tsp salt and the 3 lrg eggs

put the flour in a pile on your work counter...make a well in the center. Sprinkle in the salt and break in the eggs. Mix with a fork , gradually pulling in the flour to the eggs. Knead until well mixed and a uniform color and texture of firm non-sticky playdo.

Refrigerate 30 min. Take out and use pasta maker to knead the dough ...keep putting on biggest setting till satiny and gradually lessen the settings to the 2nd to last one. Lay sheets of dough on counter to dry slightly about 30 min. Do not let get too dry. Cut as desired with machine or by hand. Can make lasagna from the uncut sheets...we roll to the thinnest setting for lasagna. Makes incredible lasagna...very light. Let me know if this doesn't make sense. There are lots of great youtube videos. c

The topping for the pasta is shrimp that are marinated in water/sugar/salt. He sautes small amount red onion, garlic and then adds minced ham or pancetta, capers, preserved lemon minced---peel and pulp-- sliced grape tomatoes and then add a splash of white wine and salt/pepper to taste and simmer quickly with the drained shrimp. Serve with parmesan and chopped cilantro...it is a fabulous and simple recipe. c

Trailrunner, that looks delicious, what a wonderful Idea. I'm betting that the next time the grandkids are here and want to make pizza, this would be a great dessert option and they'd love it.

I have a pasta roller from my grandparents that I haven't used, yet, and jars of preserved lemons from my tree! I'm trying this!!

annie please post when you make it. Make sure and use the lemon juice on the apples...recipe doesn't call for it but wow...adds a great touch to the flavor. I also nuked the topping then drizzled as it thickens pretty quickly while you are doing the apples. Look forward to your report !

alex..it is SO good....you will love it..please post back when you make the pasta. The flavors blend so well and it only takes a few minutes to make...quick stir fry type dish. c

Caroline, that was fantastic! My first experience making pasta wasn't TOO bad, LOL! I kind of hoped that I screwed it up so I wouldn't want to attempt that, again, but no luck. I made a big mess but it was ridiculously tasty :)

Thank you for the shrimp recipe. The whole family was over the moon about the flavors. My kids have a new favorite! They can't wait for me to make lasagna with fresh pasta.

Oh alex I am SO glad ! you will love the lasagna..paper thin sheets...many layers...really small amount of filling inbetween each layer. With the homemade sheets less is more. I do about 6 -8 layers and then cover with foil and bake at 350 for 45 min and uncover for 15. Make sure and spray the foil or it will stick to the cheese! PLease post pics ! c

Oooh, thanks for the tips. Do you layer sauce, pasta, ricotta mixture, sauce, etc with cheese on top or do you just use cheese in place of ricotta?
Making pasta sheets will be less labor intensive. We had noodles all over the kitchen, lol!

I almost took pics this evening. I will next time! You'll see the eyes roll back in my kids' heads :) They are 10, 9, and 6. I'm so glad they're game for my experiments :)

Thank you (and your DH!), again, for the recipe. I can't wait to make it for guests.

I usually use a bechamel sauce 2 Tbsp flour/2 Tbsp butter and 2c milk and make it with sauteed 1/2 c onion and 2 Tbsp minced garlic in it and throw in 1/2 c grated parmesan at the end..makes it richer and more flavorful. I also do spinach when I do the bechamel. I take a 10oz bag of fresh spinach and put it on the large cutting board. I then coarsely chop it, not too much but so it is not whole leaves. I put a small amount of EVOO in a large skillet and saute some onion and then add the spinach in handsful and toss it salt and pepper lightly ...as it wilts I add more till it is all wilted. I let it all get "dark green soft " and then immediately put it in a strainer and let the juice drain off. I press it some too to get it good and dry. If my bechamel is too thick I use some of this juice to thin it !!

I use my homemade ricotta but 8 oz store bought is good too. Add an egg and salt and pepper to it and nutmeg. Fresh mozzarella and grated parm.

Layers:

thin layer bechamel in bottom of 8x11 or 9x9 greased glass pan ( above amounts are enough for this size pan)

noodles then spread small amount of bechamel, spoon spinach in dashes over this and splashes of ricotta .Sprinkle light parmasan . Repeat till all gone. Takes a lot less filling than usual . Place thin slices of mozz on top. Cover and bake. You won't believe how good this is and even people who don't like spinach will love it as it blends in and really 10oz cooked isn't much.

You can omit the ricotta completely with the bechamel if you want...lots of folks do. We love it though and makes it very creamy

If you want a red meat sauce then use very little between layers just a thin thin spread on the noodles and top with the splashes of ricotta and parm and top with the mozz. Good Luck and you MUST post pics. c
