Corned beef in a Dutch oven in the oven?
Comments (11)I had great results last Sunday at 350 degrees. I heated a little oil in the Le Creuset on the stove top, browned the patted down (paper towels) corned beef for a couple minutes all around, poured in a bottle of beer and water to about half way up the beef, and cooked it with the lid on for 3 1/2 hours. It was perfect! Tender, juicy as can be, and not at all dry. I did this for hash so threw out the water. If I was preparing cabbage, pots, and carrots I would dilute the very strong broth with water and divide into two pans; one for potatoes and carrots and another for the cabbage, and cook each for approx 20 minutes until done. This method was an experiment vs the very long and slow techniques that I've used in the past. This is a winner and will be repeated again without a doubt. Comments (30)The Costco stores in Minnesota aren't carrying the same brands of corned beef they have in the past. I mentioned only a month ago in another thread that Costco for several years sold the Vienna Beef brand of corned beef. I have visited 3 Costco stores in the last 2 weeks and they all had the "Sy Ginsberg" brand at about $3.50 a pound. I looked at many briskets at all three stores. They were all extremely fatty. In fact - the fattiest and most disgusting corned beef briskets I've ever seen. Not even close to the quality of the other brands Costco has offered in the past. Now I know some people like well marbled, fatty corned beef. But I won't be buying my CB at Costco this year. Sushi - perhaps your Costco if offering a different product. Comments (4)Thanks everyone. I will take the advice...low and slow. I think with that much meat, 6 briskets, it could take as long as 3-4 hours. I may use a large dutch oven on top of the stove for a couple of the briskets. I think trying to cram them all in the Nesco may not work. I'm planning on refrigerating the meat and slicing it the next day. I'll take it to work in several zip locks, and then reheat in the nesco with some of the cooking broth doused on top to moisten. I will cook some small new potatoes in the broth in a crock pot and ditto with some cabbage. Every year I organize a Green Food Day on St. Pat's. It is fun. Comments (27)I couldn't wait for Wednesday.....just another day really :-) So I fixed my corned beef and cabbage early and have since been enjoying leftovers. A couple of sandwiches and hash. Having the last of the hash for dinner tonite. Fixed mine today and it came out wonderfully. I love corned beef hash and always have the canned variety on hand, but may try to make home made. I'm looking forward to Reuben sandwiches. It may not be an Irish dish but my part Irish Dad always had it on Saint Patrick's Day. Would sometimes sing a few Irish ballads too.
