Lobster recipe help

Years ago I made a special dinner for my husband and I. He still talks about how good it was, but I have long since lost the recipe. We call it rusty nail lobster, but that wasn't what it was called. It was lobster in a sauce that included scotch and drambui and not a lot else. I think butter, but as I said, it's been so long. I have tried googling it, to no avail. I know it came from a softcover cookbook that a friend lent me and it was all fish and seafood. I wondered if any of you might have better luck finding it. TIA.

I have had something like that.....but never saw the recipe....as I recall it was chunks of cooked lobster in butter, Flamed with Drambui....don't remember the scotch....but there might also have been Scotch involved before in a glass!! LOL!

There's a drink called a Rusty Nail that uses those two liquors. But, alas, no lobster. But I wonder if that was the name of the recipe since it is a lot like the drink.

Hi All, Thought I'd share an update: I did a couple quick half batches for yesterday's football group. The first batch I stuck to the recipe except I added the lobster. The second batch got the thumbs up, I made the following changes: Brushed the muffin tin with melted butter instead of spraying with PAM. Dusted with Progresso Parmesan bread crumbs instead of grated parmesan. The bites held up better. Used 3/4 cup of diced lobster plus more for garnish. Added a tbs. of very finely minced onion sauteed in the butter before I added the flour. Added just a dash of Worcestershire sauce to the cheese sauce. Topped each bite with extra diced lobster before baking. Cooled bites 10 minutes instead of 5 before removing from the pan. I wish I had thought to take pictures... FYI-A whole recipe makes 48 bites using a mini muffin tin.

The lobster tails look perfect. I cringe to hear about the burns though. Pancakes are easy, in the sense of taking very little work or time to make them. They are difficult in another sense, that is it requires a knack to do them right. It's the confusion between these two that leads to beginner mishaps with pancakes. The disaster is multiplied when a bunch of well meaning folks decide to have an easy, profitable fund raiser for their organization and nobody on the crew has the knack. Jim

Seagrass, I deep-fry battered dill pickle slices all the time. If you've never tried it, they're sooo delicious! Especially good with a ranch-type dipping sauce. Joe, thanks for all the recipes and tips! I had a feeling maybe a different style of sauce might be best. I'm a sucker for good sauces, so I think I'll try both. Cilantro isn't my thing, but hot Chinese mustard sure is. It would be okay to sub Italian parsley for the cilantro, wouldn't it? And those olives sound great. Will definitely throw some in the pot with the pickles next time. Fried rattlesnake is very common in Texas, but I never got up the nerve to try it. Thanks for confirming that my wussiness didn't cause me to miss out on much, RE. :) And thanks for all the wonderfully clear and detailed instructions! I've fried shrimp several times and oysters once but wasn't totally thrilled with the results. I feel *much* more confident now that I can pull this thing off successfully. Will have a practice session with some shrimp tomorrow. Jim -- great tip about not overmixing. Just like muffin batter, huh? Who knew? I've always stirred to a faretheewell... I was wondering how on earth to get the things out of the shell while still raw. Parboiling sounds like it might work, but any idea how long? (I think the tails are usually around 6 oz.) I also really like your suggestion about using tempura for the veggies! Now all I need is a good appetizer. Linda C., I'm sure you're right about the tails. My friends were visiting near the Gulf Coast, so warm-water lobsters makes sense. And we're so far inland that I'm sure frozen will be the only kind available. So, all you Mainers, we're NOT committing heresy! :) Want to hazard a guess as to how long they should be parboiled? Greatly appreciate all the help! Any more tips and recipes welcome. sm

This is how I usually cook lobster tail: Broiled Lobster Tail Royale makes 4 servings 4 cold-water lobster tails in their shells, 6 - 7 oz. 1 cup unsalted butter 2 teaspoons finely minced garlic 2 tablespoons fresh lemon juice 2 tablespoons chopped fresh parsley Salt and freshly ground black pepper to taste Heat the broiler. With kitchen scissors, cut the upper shell of the each lobster tail down the center of the back, leaving the tail fan intact. Lift the uncooked tail meat through the slit so it rests on the shell. In a medium saucepan, melt the butter over medium heat. Add the garlic, lemon juice and parsley. Season with salt and pepper. Cook, without allowing the butter to brown, until the garlic is fragrant. Remove the heat and keep warm. Place the lobster tails on a broiler pan. Pour 2 tablespoons of the garlic-parsley butter to a small bowl and use it to brush on the lobster tails. Broil the tails, at least 6 inches from the heat, for 8 minutes, or until the meat is opaque and firm to the touch. (Note: It only took 6 minutes to cook my lobster.) To serve, place the lobster tails on 4 warmed plates. Divide the warm garlic-parsley butter among 4 ramekins and serve with the lobster for dipping. Windows On The Water, a restaurant in Kennybunkport, ME (or at least, it used to be) where I worked for a short time many years ago used to lace their lobster bisque with Drambuie. It was wonderful!

You've made me want to experiment. A good, strong lobster stock as a base, butter sauteed minced shallots and mushrooms (oysters? chantrelles?)...deglaze the pan with scotch. Cream (oh heck, as long as I'm going for it, heavy cream), white pepper...just a wee bit of tomato paste? Roux to thicken. Lace it with Drambuie and pour it over good chunks of lobster on a bed of...hmmm.

Sounds good to me!

And cookebook, yes that's why it's called Rusty nail lobster....because it contained both scotch and drambui.
and if you have ever had one after cocktails before dinner and wine with dinner....you will know why it's called a "rusty nail"!

Rachelellen, sounds fabulous, but I want it inside a ring of garlic mashed potatoes like you would for Coquille St. Jacques. I may do a little experimenting myself!

YES!!! I have been looking for a recipe that sounds very similar, that was in the Aug 1984 edition of Food & Wine magazine, called 'Lobster flamed in Drambuie. It also has root vegetables in it- I remember sweet potato and turnip/ rutabaga?? and more- they were julienned.... It was DELISH!!!
