Potato Salad Dressing Recipe?

I'm nuts about potato salad. It's one of my favorite foods. My basic method for making it is pretty good I think, but I just flounder around with the dressing, trying this or that. I prepare unpeeled red potatoes by dicing them prior to cooking. The skins cut cleanly when raw and the diced potatoes cook quickly, so quickly that they need to be watched carefully and even quenched with ice water to prevent over cooking. Quenching also shortens the preparation time when I'm in a hurry, which is always.

I need good ideas for the dressing. The salad has finely diced onion and celery. I like a loose salad with plenty of dressing. Plain mayonnaise is too sticky.

Nothing complicated, please. Recipes with tiny amounts of a hundred ingredients are not my style. Tell me what is essential. For example, is a 50/50 mix of yogurt and mayonnaise a good starting point? Please help.
