Smokey BBQ sauce, Bourbon Butter and Rub

Here you go David and anyone else interested. I use the Rub on everything. And the BBQ sauce on everything too! I save the Butter for when I'm grilling chickens.

The Bourbon Butter:

6 ounces butter, cut into small pieces

1/4 cup brown sugar

2 tablespoons bourbon

1/2 lemon, juiced

1 teaspoon kosher salt + salt to taste

1/2 teaspoon freshly ground pepper

Baste on bird as grilling or roasting.

Smoky Barbecue Dry Rub

INGREDIENTS:

2 teaspoons smoked paprika

2 teaspoons kosher salt

1 tablespoon sugar

1/2 teaspoon freshly ground pepper

1/2 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon chile powder

1/2 teaspoon cayenne pepper

INSTRUCTIONS:

Combine the paprika, salt, sugar, pepper, cumin, garlic powder, chile powder and cayenne pepper in a small bowl and mix well with a small whisk.

Yields 3 tablespoons

Quick Smokey Maple Barbecue Sauce

INGREDIENTS:

1/2 cup cider vinegar

1 cup ketchup

1/4 cup brown sugar

2 tablespoons dry mustard

1/4 cup maple syrup

2 tablespoons Worcestershire sauce

2 teaspoons smoked paprika

1/2 teaspoon cayenne pepper

1/2 teaspoon freshly ground pepper

1 teaspoon kosher salt

INSTRUCTIONS:

Combine ingredients in a saucepan and bring to a boil. Lower heat and simmer for 15-20 minutes until thickened.

Yields approximately 2 1/2 cups sauce
