I am in the process of making a pot of bean soup. I have added two small ham hocks but am wondering if its not enough flavor even with the seasoning packet, could I add some "ham broth" that I got from boiling down a ham bone at thanksgiving. I let it cook down, cool and then put it in the freezer. Would it still be good to use since it has been frozen that long? I assume the fat part has risen to the surface so I would scoop down into the depth of the bowl as to not get too much of the fat.

Appreciate any help you can give. I actually forgot I had it until now and I think the flavor would be nice to add, esp. if the han hocks don't give it too much meat flavor.
