Soooo Whatcha doing for Paddys Day???

Family is coming for Corned Beef, Cabbage w/onions and bacon potatos soda bread and Shepherds Pie....Should be fun we will listen to Irish Music the girl will do some step dancing... but I do like when this holiday falls on a weekend!

I'm making green deviled eggs for Kim to take to work for the potluck there. Boiled dinner and maybe Irish Soda bread.

Marlene, I bought my stacked cake plates thru Target ONLINE (not in any stores) some time ago. Tho one time I did see them in a Ross or TJ Maxx. I added the sundae cup to the top, it was a dollar at Walmart. I discovered all this when I first joined our Forum many years ago, thru a gal named Judith who was an amazing decorator. Wish she was still here, maybe someday she'll come back. Some of her things are in our various holiday albums at least. I'm sure its not hard to find stuff to make your own stacked plates from scratch at thrift shops or yard sales. I saw somewhere online, a lady had put a small cloche on the top plate!! I may try that for Easter. I really liked the idea. I use to tell my kids if they ever drug me, kicking and screaming, into a nursing home...they darn well better bring my stacked plates and a cloche for me to decorate. Those things don't take up much room and give you a LOT of bang for your buck I think. Thanks for all the kind words, Gang. I wish my heart would get back into decorating, this felt kind of thrown together thanks to Lil Paddy pushing me to do it. But I have a feeling my BF is going to make sure I get all the Easter stuff out no matter what. LOL. hugs, Karen

I never used to make so many desserts, either -- I hardly ever make dessert all year, so why do it when they aren't even very good? But I could do the candy and frozen bonbons before I went to Israel, so I did them just for fun. Also, my kidz will be home for a few days, and when my daughter is home, the house fills up with her friends, so it's good to have some stuff around. lovestocookfor6, I don't have much experience with the frozen gefilte fish. My friend recently made a terrific dish with two frozen gefilte fishes, one salmon and one "regular," spread in layers in a spring form pan. She said it was really easy. I liked it so much I took home half the leftovers! I thought about it, but I have too many people for that. Anyway, I happen to like the stuff in the jar. My friend and I are not giving up on our quest to learn to make really good homemade gefilte fish. We need a lesson from someone with experience; recipes are fine, but we need to know the correct pre-cooking textures and tastes. The frozen strawberry mousse is really fun to make. I made it this morning. Be sure to use your very biggest bowl -- it is amazing how much this small amount of ingredients grows. The recipe perfectly fills my big glass trifle bowl. 2 egg whites 3/4 c sugar 1 pint (small basket) strawberries, hulled, sliced, and lightly sprinkled with sugar 1 T lemon juice pinch of salt 3 T "square wine" (kosher concord grape wine) Beat egg whites to stiff peaks. Add sugar and beat again to stiff peaks (that's what the recipe says, but think more like "marshmallow fluff"). With mixer on low, add the remaining ingredients and start beating slowly, then bring up speed. Beat for 15 (yes, 15) minutes. Cover and freeze overnight. It doesn't freeze very hard, and it melts pretty fast, but it refreezes pretty well. Garnish with strawberries or nuts. (Chocolate curls would probably look spectacular, but I can't stand chocolate with fruit.) Enjoy! I hope you find the afikomen --

annie1992 - yes! I wasn't sure how it was spelled. They and my brother had taken a trip to Italy and France and they briefly were in Switzerland for a bit and I knew they had come across this dish somewhere in that trip so I didn't know whether it was French or Swiss! But they did have a special gizmo with little heating plates that sits in the center of the table and they made all these special dishes. Everyone has a little pie wedge shaped plate, and you heap on whatever you want from the assortment of meats and veggies and then top it with the special cheese - where the name comes from, pop it in the machine and it melts the cheese and heats everything up - it was like fondue but with little plates that grill instead of spearing foods and dipping. It was a lot of fun, but it looked like it was also a ton of work getting all the individual foods ready!! But they always do something fun and unique like that for Mother's Day. We're a crowd that loves to cook and loves to eat and loves to travel, so these events are usually used as an opportunity to try a new ethnic cuisine or recreate something someone had in their travels. Day After Thanksgiving . . . Whatcha Doing???

We camped. It was GREAT! We haven't been in a while. We hosted Thanksgiving, but ate early (noon) as my brother and SIL were going back to her parents to eat again that evening. Worked out well as we left late afternoon. We're within an hour of The Great Smoky Mts. national park and Cades Cove is one of our most favorite placess. Hubby had taken the camper up on Wednesday, so it was all set up. We took Thanksgiving dinner leftovers and had it all again Friday night. Took breakfast foods and snack type stuff (cheese/crackers, fruit, sliced ham, etc.) so other than warming everything Friday evening, I did no cooking. Temps were 60's in the daytime but quite chilly at night. Stars were amazing. We have heat in the camper and I had a set of flannel sheets and a warm blanket - so we were snug. We took lots of long walks/hikes,so hopefully worked off the extra calories. It was so nice to relax and enjoy the beautiful outdoors after a week of prepping and also dealing with a situation with my grandmother and her assisted living. Her roommate passed away and is has caused a bit of regression on her part. But anyway, it was just what we needed. Came home today and I'm in my jammies, taking it easy. House is clean, laundry is going and I'm just enjoying! We will decorate later in the week. Had thought to maybe put out the wreaths, greenery, etc. outside this afternoon but it rained earlier and still damp. Ann - I know you will enjoy tomorrow - have fun!! tina

Thanks okay, I know grammer doesn't count here, I just min-interpreted it. Actually, Cooking potatoes in bacon fat then crumbling it over the cooked taters sound pretty good! Maybe I'll make that for breakfast on St Paddys Day

I was going to make green bread but the idea was not very well accepted by my two boys! :-( Oh well, we don't do much for St. Patrick's Day so probably will just use avocado to make green tuna sandwich for little man's bento box.

We usually make Dublin Coddle.

DH won't be here, and I'm trying to decide if I'll make it for myself or just wait until next time he's home. I mean I LIKE it, but not enouogh to eat it for a week!

St Patrick's Day falls on my bunco night this year. So the hostess is making corned beef and cabbage etc for us all.

Did anyone see Desperate Housewives last night re: Leprechauns?? Very cute.

I made Dublin COddle a few years ago and though everyone ate it, they all said they would prefer the Corned Beef route so there you have it. They way I made it was Sausage, Ham, potatoes, cabbage, etc all sort of cooked together.

So this year we are back to the traditional CB & C, with parsnips, carrots, onions... Irish Soda Bread on the side, probably a few Black & Tans, a tot of Bushmills for me and Irish Car Bomb Cupcakes for dessert. I made those last year for the first time and they were a huge hit! Of course, the kids only get 1 LOLOLOLOL!

Just some Jameson or Red Breast for me.

It's Lulu's 5th birthday, so we'll have green cake and whatever she would like for dinner. I'm guessing chicken nuggets and french fries. Or perhaps macaroni and cheese.

My husband (who is 1/2 Irish) said he would just get an Amy's frozen dinner if I wanted to do corned beef. This is a guy who loves home-made corned beef hash. Go figure!

I decided to just make my corned beef and cabbage on Sat so I can babysit it. When I stopped to order my onion rye I got to sample the Publix Irish soda bread. Yum! They put white icing on theirs. One bite is all I get though.

I hate dieting!

I'm hosting my sewing group that day for lunch. I'm serving beef'n barley soup (might throw in some cabbage) with Grainlady's Oat Farls, plus some green hummous. Fresh fruit for dessert.

There's probably as many recipes for it as for soup, but the way we make Dublin Coddle is to bake sliced onions, sliced potatos, bacon, and broth with a few links of garlic sausage cooked into it. No cabbage in ours, which is just as well since DH can't eat that. We're not big corned beef fans.

I've seen that episode a number of times over the years.

It only became associated with the Irish when they moved to the United States.

I'm probably going to do a small corned beef tonight. That way I'll have cold corned beef tomorrow for Reuben Sandwiches!
