Casseroles for a convalescent

My Dad is going to have surgery the first week in April. He is married to a woman who has health issues of her own and who, even in the best of health, does not cook. My Dad gently asked if it would be at all possible if I could make some casseroles for him during his convalescence.

My dilemma is that I am not that good a cook, and I don't cook with or eat red meat. In fact the thought of it makes me queasy. My Dad is a red meat and potatoes type of guy. My own family eats mostly beans, eggs, with some poultry and fish occasionally thrown in. And I only have one casserole in my recipe file for a spinach lasagna.

Any good recipes to bridge this divide? I really can't see myself dealing with red meat, even tho I love my Dad more than anything in the world. Any help you can give me would be greatly appreciated!
