Because I had to buy a 6 pack of Guiness to get 8 oz for the cupcakes, I'm also going to try Beeramisu. See recipe at link. I've never tried it before, so I can't tell you if it will be good or not.

Oh wow, I have tons of Guinness left too and Beeramisu sounds interesting! I usually make the Guinness cupcakes for St. Patrick's Day but I might try that Beeramisu as I bet it would be a hit at work. :) Thanks for the recipe bbstx!

Irish Bread Pudding with Caramel-Whiskey Sauce
Adapted from Cooking Light Recipe

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup light butter -- melted
1 (10-ounce) French bread baguette -- cut into 1-inch thick slices (I use whatever is around Challah works well)
3/4 cup raisins
1/3 cup Irish whiskey (or bourbon)
1 3/4 cups 1% low-fat milk
1 cup sugar
1 tablespoon vanilla extract
1 (12-ounce) can evaporated skim milk
2 large eggs -- lightly beaten
Cooking spray
1 tablespoon sugar
1 teaspoon ground cinnamon

Caramel-Whiskey Sauce

CARAMEL-WHISKEY SAUCE
1 1/2 cups sugar
2/3 cup water
1/4 cup butter
2 ounces cream cheese
1/4 cup Irish whiskey (or bourbon)
1/4 cup 1% low-fat milk

Preheat oven to 350.

Brush melted butter on one side of French bread slices, and place bread,
buttered sides up, on a baking sheet. Bake bread at 350 for 10 minutes or
until lightly toasted. Cut bread into 1/2-inch cubes, and set aside.

Combine raisins and whiskey in a small bowl; cover and let stand 10
minutes or until soft (do not drain).

Combine 1% milk and next 4 ingredients (1% milk through eggs) in a large
bowl; stir well with a whisk. Add bread cubes and raisin mixture, pressing
gently to moisten; let stand 15 minutes. Spoon bread mixture into a 13 x
9-inch baking dish coated with cooking spray. Combine 1 tablespoon sugar
and cinnamon; sprinkle over pudding. Bake at 350 for 35 minutes or until
set. Serve warm with Caramel-Whiskey Sauce.

To Make Caramel-Whiskey Sauce:

Combine sugar and water in a small heavy saucepan over medium-high heat;
cook until sugar dissolves, stirring constantly. Cook an additional 15
minutes or until golden (do not stir). Remove from heat. Carefully add
butter and cream cheese, stirring constantly with a whisk (mixture will be
hot and bubble vigorously). Cool slightly, and stir in whiskey and milk.

I don't have any exciting St. Patrick's day desserts but do have some idea for using up your leftover beer.

Adding a cup of beer to the broth for bean, lentil or split pea soups gives them an extra undefinable flavor boost.

These muffins are a family tradition for early morning fishing trips.

BEER, ONION AND BACON MUFFINS (makes 12 muffins)

6 slices bacon, chopped
2 cups chopped onions
3 tsp. sugar, divided
1/4 tsp. dried thyme
2 eggs
3/4 cup beer or ale
1/4 cup EV olive oil
1 1/2 cups flour
3/4 cup grated Parmesan cheese
2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 375. Grease 12 standard muffin cups. Line a small plate with paper towels.

Heat large skillet over medium heat. Add bacon and cook until crisp, stirring occasionally. Remove bacon to prepared plate with lotted spoon. Add onion, 1 tsp. sugar and thyme to skillet; cook 12 to 14 minutes or until onion is golden brown, stirring occasionally. Cool 5 minutes; stir in bacon.

Meanwhile, combine eggs, beer and oil in medium bowl. Combine remaining 2 tsp. sugar, flour, cheese, baking powder and salt in large bowl. Add beer mixture to flour mixture; stir just until moistened. Do not over mix. Gently stir in onion mixture. Spoon batter evenly into prepared muffin cups.

Bake 15 to 17 minutes or until toothpick inserted into centers comes out clean. Cool in pan 5 minutes. Serve warm or at room temperature.

I love St. Patrick's Day and make a number of cakes and breads. This year I'm going to add this new recipe to the mix. -Grainlady

Oatmeal Creme Brulee
(source: Bring Emerald Sparkle To Your Table - presented by Bord Bia - Irish Food Board)

1 c. McCann's Steel-Cut Oatmeal
6 c. water
2 c. fresh or frozen (with no syrup) berries such as strawberries, blueberries, raspberries; mixed or along
1/2 c. sugar, plus 4 T.
1/2 c. water

In a heavy saucepan, bring 6 cups of water to the boil. Add Irisn oatmeal, stirring, lower the heat, and simmer for 40-45 minutes.

Meanwhile, in another saucepan, bring the 1/2 cup water and 1/2 cup sugar to a boil (if using frozen fruit reduce water to 1/3-cup). Add fruit and turn off heat. (This fruit mixture can be made several days ahead).

Pre-heat broiler.

Gently combine the fruit compote and the oatmeal. Divide among 4 cereal bowls. Top each with 1 T. sugar. Place under broiler, until sugar is caramelized.

Wow, some great ideas here. I might just have to make beeramisu just because of the name!! There will be kids and people in recovery, so will have to do something else if I make that tho.

Key Lime Cake

1 3 oz. pkg lime jello
1 1/3 cups sugar
2 cups sifted all-purpose flour
1/2 t. salt
1 t. baking powder
1 t. baking soda
3 large eggs
1 1/2 cups vegetable oil (I used canola)
3/4 cup orange juice
1 T. lemon juice
1/2 t. vanilla (I probably used a little more)

Combine all dry ingredients and mix together.
Add the eggs, oil, orange juice, lemon juice, and vanilla. Mix well and divide among 3 greased and floured cake pans or use 1 9 x 13 cake pan (which is what i used). Bake at 350 for 35-40 minutes...check for doneness by the old toothpick test or your finger touching top..pour glaze over top and let cool before icing....

glaze:
1/2 cup key lime juice or juice from about 4 regular limes
1/2 cup powdered sugar

while layers are still hot, mix the lime juice and powdered sugar and pour over cake...I pricked the top with a fork several times to soak it better. Let cool and prepare icing.

Icing:
1 stick butter
1 8-oz cream cheese
1 pound powdered sugar
( I also grated lime rind into this)
vanilla

Cream butter and cream cheese. Beat in the powdered sugar and rind (if you use it) until smooth and creamy....spread over cake, trying not to eat the icing before it hits the cake.

Enjoy!

Pistachio St. Patrick's Day Bread

This bread is so scrumptious and the kids love that its green...its perfect for this "FUN festive IRISH DAY".
Pistachio is one of my favorite flavors...which makes this bread one of my favorites. You have to try it...you'll be glad that you did.

1 yellow cake mix
4 eggs
1/4 c. oil
2 T. water
1 (3 oz) pkg. instant pistachio pudding mix
1 c. sour cream
1/2-1 t. green food coloring
1 t. almond extract
3/4 c. chopped walnuts

Preheat oven to 350 degrees. Grease and flour two loaf pans. Mix all ingredient together until well blended. Pour into prepared pans. Bake for 40-45 minutes. Cool 10 minutes before removing from pans.

Hubby loves that pistachio pudding dessert where you mix it with crushed pineapple and coolwhip. It scares me a bit but it's green! My personal fav is mint chocolate brownies. And now I'm inspired by that pistachio cake recipe to try some kind of pistachio muffins.

How about Irish "potatoes"?? My Grandmother would make these on occasion. ONE left-over boiled potato... mashed/riced. Probably a whole box of powdered sugar... one spud can absorb a LOT. Shaped and rolled in cinnamon.

Gun Runners

8-10 oz. hot coffee (I use decaf)
1 oz Baileys Irish Cream
1 oz Jameson Irish whiskey
1 oz. Kahlua
Whipped Cream

Add Baileys, Jameson and Kahlua to the mug of hot coffee. Top with whipped cream. Serve immediately. Makes one serving. No driving allowed!!!

Well, yum! Some more really great sounding things. It's going to be hard to decide what to make, although most of these would be good anytime.

I am reconsidering what to bring to DGS & DGD school as I am concerned about my contribution being censored and don't want to embarrass my grands. DGS was told "it's not St. Patrick's Day, it's Leprechaun Day".

I just want to thank you, bbstx for that link to Beeramisou! I made it for my party and it was a hit. Completely delicious and fun to talk about. The Guinness stout really tasted like Kahlua on the ladyfingers, I thought...or maybe it was the combo with the Irish Cream. But it was very, very good and so easy.

I also made Oreo Truffles on lollipop sticks, plus one batch of Thin Mint truffles. We couldn't get over how delicious they were - who knew? And cute as can be...I can't believe I forgot to take a picture.

olychick, glad the recipe worked out for you. I haven't made the Beeramisu because I live in the sticks and can't find ladyfingers, except the cookies that are like elongated vanilla Oreos. Heading to The Big City tomorrow. Maybe I can find proper ladyfingers there.

My DD and I made some of these last night. She added a couple of gold coins from that pot of gold at the end of the rainbow.

Oh, how cute! Saving these ideas. Last year I made Irish potato candies and fooled my kids classmates....that crazy lephrschan up to his shenanigans!

I made the beeramisu too at work! I had to quadruple the batch and didn't have enough ladyfingers (I can't find them around town this time of year) so I used some Nilla wafers and pound cake to stretch it out.

Huge huge huge hit and so easy to put together!

grainlady, how did your creme brulee turn out? I made that recipe last year, we all tried it, and I ended up throwing it all way, it isn't a keeper in our house.

We had green "ice cream". Blend frozen peaches, a little bit of almond milk, a few drops of almond extract and a couple large handfuls of fresh spinach in the Vitamix (use tamper to help process quickly) til creamy. Bright green, and tasty too. :o)

I thought I'd seen ladyfingers at TJ's, but when I went to get them was told they are seasonal. then I remembered World Market and their large imported food section. They had them, plus, in your birthday month, if you sign up for their email notifications, they give you a $10 gift certificate, so the ladyfingers were free!
