What to serve with--

I'm making Ina Garten's Tuscan Lemon Chicken for visiting family; there will be four of us. The recipe's basically a spatchcocked chicken grilled under a weight after marinating in olive oil, lemon (juice and zest), garlic and rosemary. The problem is what to serve with it. Guests don't eat asparagus or mushrooms. What would you use for sides?
