My au gratin potatoes curdled--would you eat them?

I made the prettiest pan of au gratin potatoes. I used a can of evaporated milk and a can of lowfat evaporated mild (all I had in the house). I used a lot less flour between the layers than I typically do.
It is an ugly mess but the flavor is ok. I could not read the expiration dates but finally figured out the low fat can was a year too late. It smelled ok.
Would you eat it or toss it. I recently had food poisoning so not desperate to go there again. I think it is ok that way but just a ruined texture. What to you think??
