I made Broccoli Soup

I made soup today. Here it is. It is easy and not high-cal.
1 large bunch broccoli
2-3 T butter
1 medium onion chopped
1 clove garlic, finely chopped
1 medium potato
4 cups chicken broth
2 cups milk
1/2 t salt
1/4 t pepper
Cut off flowerets and cook until tender (I use MW). Set aside. Slice and dice stalks.
Heat butter in large heavy saucepan. Add stalks, onion and garlic. Cook slowly, stir frequently for 10 mins. Add potato and broth. Simmer 15 mins until potato is tender. Puree in blender until smooth. Return to saucepan and add milk and flowerets. Heat. Eat!
Oh yeah -- throw the salt and pepper in there, too. I don't like pepper so I didn't use it. |

| That looks wonderful! I actually had a broccoli soup recipe out today (a Panera bread copycat) but I didn't end up making it because it looked so high-calorie-2 c of half and half and 8 oz cheddar cheese. Your recipe is more along the lines of what I wanted. Thanks for posting. Tracey |

| wow, I agree, isn't that your first picture? It looks pretty darned good. Good enough, in fact, that I'm going to have to make some. As soon as I eat the leftovers from all the cooking I did today, LOL. I'll bet the broccoli could be soft enough for Ashley to eat too.... Annie |

| Pam that looks really good and is something that I could eat as well. I imagine the same recipe would be great for making asparagus soup too. I haven't had homemade asparagus soup for a long time! I would have to use skim milk at the moment though. Thanks for that and your photo! SharonCb |

| I've been wanting a good broccoli soup recipe. Hey, isn't this broccoli cookalong weekend, or has that passed? I'll have to get some broccoli and make that for my lunch or supper today. This is a good soup day here, although, tomorrow, with yet another day of cold rain, could be even better for that soup. Good pic. Sally |

| Yes, it's quick and easy and as I said, not a killer as far as calories. Unless you load it with cheddar cheese as Jessy suggest. I bet it would taste out of this world with the cheese. |

I also would like some cheese in there,,,,but try using a little parmesan or asiago, you can add some good cheese flavor for not much cheese, Also some cut up celery in there asdss fkavor with miniumal calories and a squeeze of lemon just before you seve it. I only have about 1 stem of brioccoli....and it's too snowey to go out! |

| I did more cooking in the past two days than I have in the last six months. Glad the soup worked out for you, Mary. Linda, I never like the taste of celery in soup, I don't know why. Yes, adding cheese would be fantastic, but I was saving my calories for the pulled pork. Man, you sure have to wash a lot of pots and pans when you cook. If someone can solve that problem, I'd do it more. |

| I make a soup that is almost identical (except without the milk), but I have been using potato starch instead of a potato. I think I will now switch to using an actual potato!! I don't know why I didn't think of that before, but otherwise the way I make it is exactly the same. One other difference is that I put the florets in a steamer basket and steam them above the stems and onions, and I use a stick blender so that I don't have to pour anything. I wanted to make soup last week-end, but it wasn't quite cold enough. It was in the low 60s and would have been cold enough except that it was extremely sunny and there was no wind. It's supposed to be colder (i.e. wet) later this week, but I'm making bok choy soup instead of broccoli. Lars |

| I made this soup yesterday (a day late for the broccoli cookalong, but that's the way it works out sometimes.) Yesterday was cold and rainy, and a perfect day for soup. I enjoyed it quite a bit. I did add a little bit of white cheddar and parmesan to boost the calcium and protein, but I would have enjoyed it almost as much without the cheese. (cheese-aholic, here!) I had some left over polenta, so I experimented with making polenta cakes to go on the side. I'll have to work on those a bit, cause they were kinda mushy, but have great potential. I've been wanting a good broccoli soup recipe. Thanks, Dedtired! Sally |

| Lars, I never thought of using the stick blender. That makes perfect sense. I think you can use whatever kind of milk you want. I used 2%. Of course, it will be richer with more fat, but I think it's nice and creamy without a high fat milk. I suppose if you are disappointed with the results you could add butter or cheese later. More snow on the way so i will have to think about what to cook next, providing there is anything left in the grocery store on my way home. |

| Snowing here today so I made the broccoli soup. Added celery to the sauteed veggies, used skim milk and added some cheese that needed using up. Both 'cheeses' were of the mystery pasteurized cheese food category. The soup was a little thin to suit me so I thickened it up w/ a flour/ water paste. Anyway, the soup turned out really, really good. The guys are pretty happy after starting the day w/ Joanm's Waffles of Insane Greatness from the January new recipe review thread and finishing up the day w/ this soup. |

dedtired, I made your soup (didn't have enough broccoli so added some cauliflower and used a little leftover cream along with the milk). It was wonderful! Thanks you..I'm so glad I saw your recipe! Pam |
