Sharon (Canarybird) Looking for your Lemon Square recipe

Can you please post it again. I went looking through my pictures for something sweet to bake today and settled on your Lemon Squares but I can't find the recipe. I was sure I saved it.

Hi Ann. Is it the lemon graham slice?

Here is that recipe.

LEMON GRAHAM SLICE
1 1/2 cups (350 mL) Graham cracker crumbs
1/3 cup (75 mL) packed brown sugar
1/2 teasp (2 mL) baking powder
1/8 teasp (0.5 mL) salt
1/2 cup (125 mL) butter or margarine
10 oz (284 mL)sweetened condensed milk
1/2 cup (125 mL) lemon juice
1 teasp (5 mL) vanilla
Bottom Layer
Crumble first 5 ingredients together well and pack into 9 x 9 inch (22 x 22 cm) ungreased pan. Set aside.
Top Layer
Combine milk, lemon juice and vanilla in bowl and stir. Spread over bottom layer. Bake in 350Â°F (180Â°C) oven for 20 to 25 minutes. Cool and cut into 36 squares.

Thanks Stacy....that's the one. Ann it's so good as a dessert too, sliced and topped with whipped cream.

It is really sweet.

Ann as we don't get graham wafers here I used crushed Digestive Biscuits for the base when I made it here in Tenerife.

Made it once in Canada with the graham wafers though and my daughter also makes this recipe and it's a hit with the family.

LEMON BARS DELUXE 2 1/4 cup flour 1/2 cup confectioners' sugar, plus additional for sprinkling 2 sticks butter 4 beaten eggs 2 cups granulated sugar 1/3 cup fresh lemon juice 1/2 tsp baking powder Preheat oven to 350. Oh Sharon, I am so sorry on the loss of your beloved Wolf. Such a wonderful loving devoted couple, Back when I was active on this forum, I loved seeing all the restaurants you visited and the lovely meals you both enjoyed.Not to mention the wonderful meals you cooked and enjoyed together, and your German friend that came to visit. I agree, cooking for one is a lot different. My hubs is out of town lots, and my son not here as often for dinner, so yes, it is hard to get motivated to cook for one! Your meatloaf recipe looks wonderful. I will have to give it a try. I've always loved meatloaf, but the rest of my clan has just decided that they like it. Go figure. My hubby and I don't watch the game, he does love the commercials though, my 23 year old daughter and her 3 roommates are hosting a pot luck super bowl party for at least 30 people. She called me yesterday to ask for the recipes for the following. All to be their food offerings for the day and evening. She no doupt will be tripling or more the recipes for their party. Orange and sweet potato stew (from woman's world magazine) chinese chicken wings (from boston globe) Kraft chicken wings Mom's banana bread Pound cake (printed in Ann lander's many years ago) Hershey's deep dish brownies Mom's floating Island punch (from betty crocker) ORANGE AND SWEET POTATO BEEF STEW SERVES 6 INGREDIENTS 1 orange 1 1/2 pounds beff stew meat cut into 2 inch cubes 2 tablespoons all-purpose flour 1 tablespoon oil 1 onion chopped 2 tablespoons curry powder 1 can (14 1/2 oz) low sodium beef broth 1 cup chopped pitted prunes 2 pounds sweet potatoes, peeled and cut into 2 inch cubes 1 cup frozen peas, thawed 1/2 cup chopped cilantro or parsley using a vegetable peeler, remove zest, withoug white pith, from all over orange. Halve orange and reserve juice. Coat beef with flour. In large pot, heat oil over mediium heat. Add beer; cook, stirring occasionally, until browned, 3-5 minutes. Add onion, and curry. Cook until onion is softened, 2-3 minutes. Stir in broth, prunes, and reserved zest in strips and juice. Bring to a boil; cover and cook over medium heat stirring occasionally, 1 hour. Add potates; cook until meat and potatoes are tender, 45-60 minutes. Stir in peas and cilantro or parsely. Remove zest and serve. My changes. I added several peeled russet potates with the sweet potatoes. Also added fresh green beans and sliced white mushrooms about half way through the cooking time for the potates and only used 1/2 teaspoon of curry. I also thinned the thick sauce with added orange juice. CHINESE CHICKEN WINGS ALSO CALLED SILVER SPOON WINGS MAKES HORS D'OEVRES FOR 6-8 PEOPLE. INGREDIENTS 1/2 cup sugar 1/2 cup water 1/2 cup low sodium soy sauce 1/4 cup pineappe juice 1 teaspoon grated fresh ginger 1/2 teaspoon garlic powder 2-3 pounds chicken wings, cut at the joints, tips discarded. Combine sugar, water, soy sauce, ginger and garlic powder. Stir until sugar is disolved and set aside. Place chicken wings in large ziploc bag. Pour in marinade and seal. Marinate wings at least one full day, 2 days is even better, turning bag several times to mix. Preheat oven to 350 degrees. Lift wings from marinade and place on cookie sheet lined with aluminum foil and sprayed with cooking spray. Bake 40 minutes or until tender, basting twice with remaining marinade. Can be eaten hot or cold. KRAFT MARINATED CHICKEN WINGS MAKES 36 APPETIZERS INGREDIENTS 1 1/2 dozen chicken wings disjointed 1 8 ounce bottle kraft catalina salad dressing 1/4 cup low sodium soy sauce 2 teaspoons minced ginger Mix marinate and set aside. put chicken wings in ziploc bag. Pour marinade in and seal. marinate wings several hours or over night. Place wings on broiler pan and broil 15-20 minutes, brushing with marinade once. Turn wings once during cooking. Serve with horseraddich sauce. Both wing recipes can be made the day before and reheated in a microwave or oven. Stew is easy to make the day of MOM'S BANANA BREAD MAKES 1 LOAF. BE SURE TO FOLLOW THE DIRECTIONS EXACTLY OR THE BREAD WILL NOT COME OUT LIGHT AND AIRY, MORE LIKE A CAKE. INGREDIENTS 2 CUPS FLOUR 1 TEASPOON BAKING SODA 2 MEDIUM BANANAS MASHED 1/2 CUP UNSALTED MARGARINE SOFTENED 1 CUP SUGAR 2 EGGS 1/4 TEASPOON VANILLA 1/4 CUP WATER OPTIONAL TO ADD 1/2 CUP FINELY CUT UP DATES 1/2 CUP FINELY CHOPPED WALNUTS Preheat oven to 350 degrees In large bowl, cream margarine and sugar. beat in eggs one at a time until light and fluffy. Stir in vanilla and mashed bananas. Add flour, baking soda and mix just till blended. Add water and mix till blended. Stir in dates and/or walnuts if using. Turn into a loaf pan greased or sprayed with pam and bake 65-70 minutes or until toothpick comes out clean in center. Cool about 10 minutes, then remove from pan. Tastes wonderful when still warm PPUND CAKE FROM ANN LANDERS MAKES 2 LOAVES PREHEAT OVEN TO 275 DEGREES BAKE ABOUT 1 HOUR AND 45 MINUTES BE SURE TO USE AND EXTREMELY LARGE MIXING BOWL INGREDIENTS 3 sticks unsalted margarine or butter 3 cups sugar 5 large eggs 3 cups flour 1 teaspoon vanilla 1/2 teaspoon lemon extract or l teaspoon grated lemon rind 1/2 teaspoon almond extract 7/8 cup gingerale, or lemon-lime soda Cream margarin until light. Cream in sugar and beat until light and fluffy. Beat in eggs one at a time. Beat in 1 up flour and extracts and a little gingerale. Continue adding flour and gengerale until all ingredients are used. Pour into 2 greased and floured or sprayed with pam, loaf pans. Bake 1 hour and 45 minutes until toothpick stuck in center comes out dry and sides shrink from pan. Let cool in pan. This was always my kids favorite and would prefer this pound cake to a birthday cake every year. HERSHEY'S DEEP DISH BROWNIES FROM THE HERSHEY'S KITCHEN Preheat oven to 350 degrees INGREDIENTS 3/4 cup unsalted butter or margarine 1 1/2 cups sugar 1 1/2 teaspoon vanilla 3 eggs 3/4 cup unsifted all-purpose flour 1/2 cup Hershey's cocoa 1/2 teaspoon baking powder blend melted butter or margarine, sugar and vanilla in a mixing bowl. Add eggs. beat well with spoon. Combine flour, cocoa, baking powder; gradually add to egg mixture until well blended. Spread in grease or sprayed with cooking spray, 8 inch square pan. Bake for 40-45 minutes or until brownie begins to pull away from edges of pan. Cool and cut into squares. Tastes really good when served still a little warm MARDI GRAS PUNCH MAKES 14 SERVINGS, ABOUT 1 CUP EACH INGREDIENTS 1 6 ounce can frozen orange juice thawed 1 6 ounce can frozen lemonade thawed 1 quart apple juice 2 quarts or 1 2 liter bottle gingerale raspberry sherbet orange sherbet lime sherbet lemon sherbet in lage punch bowl, stir together concentrates and apple juice. Stir in giner ale; scoop balls of sherbet into punch. You can also add ice cubes to keep cold. My changes. I freeze fruit, such as blueberries, pieces of strawberries and grapes in with ice cubes. Then add to the punch with the sherbet. As the sherbet starts to melt in leaves a foam on the top of the punch which adds to the taste. Hope you try some or all of these. They are all easy to double, triple etc for a large crowd

Easy Italian Chicken 4-6 chicken breasts 1 very large tomato 1 large bottle Italian dressing (fat free is ok too) Grated Parmesan cheese (as much or as little as you like) Place chicken in baking dish. Pour Italian dressing over top.Cut up tomatoes to bite size pieces and place on top of chicken. Add cheese. Bake at 350 degrees for at least an hour or until juices run clear. Serve white rice and pour juice over rice from the chicken. Source: SOAR My way of making this: I use skinless, boneless chicken breasts & cut each breast into thirds. Ive never used a whole bottle of Italian dressing. I like to sprinkle dried rosemary and dried basil over the chicken & tomatoes along with some garlic powder and dried red pepper flakes. I usually serve with vermicelli on the side. You can make everything the night before, cover with saran wrap and refrigerate until ready to bake. Sweet Potato Casserole 4 large sweet potatoes ½ cup granulated sugar ½ stick butter 1 Tbsp Half & Half (or more if it needs thinning) 1 tsp. Vanilla extract Walnut or pecan halves ½ cup Brown sugar 1/3 bag Miniature Marshmallows Boil, peel & mash sweet potatoes. Add butter, granulated sugar, Half & Half. Then add vanilla. Whip potato mixture in electric mixer until smooth. Pour into casserole dish; swirl in brown sugar and about 1/3 bag of miniature marshmallows. Top with walnut or pecan halves. Bake at 350 degrees for 25 minutes. (Recipe can be made ahead and refrigerated. Bring to room temperature before baking.) Note: I have also added the miniature marshmallows towards the end of the baking time so that theyre partially intact/melted. This is delicious! Thin Noodles with Bacon This was a favorite supper of mine as a kid. Cook noodles or thin spaghetti or orzo until al dente. After draining and placing in bowl, I add butter and then parmesan (either grind up a wedge or get the Digiorno shredded in the little plastic container). Salt and freshly ground black pepper. (sometimes I squirt a little fresh lemon juice over the pasta at this point). Then I sprinkle with crisp bacon cut in bite size pieces . Serve this with a tossed salad with vinaigrette or Italian dressing. You might want to just start with the noodles, butter and bacon to see if your family likes it and add the parmesan on your own serving. Meat Loaf 2 eggs 3 oz tomato paste ½ cup water 1 tsp salt 15 grinds fresh black pepper (probably should use way less ) ¼ tsp cayenne pepper 2 lbs ground beef, 85-90% lean ½ cup plain breadcrumbs 1 small onion, finely chopped 1 garlic clove, pressed Preheat the oven to 350. Whisk together the eggs, tomato paste, water, salt, pepper and cayenne in a large mixing bowl. Add the remaining ingredients and work together completely until all the ingredients are evenly distributed. Place the meat mixture into a baking pan and shape into a loaf about 11" x 4" wide. The loaf should be in the middle of the pan. Blend some ketchup, a little chili sauce, Worcestershire sauce, garlic powder and a little bottled BBQ sauce and spread over the meatloaf. Cover with foil. Bake 45 minutes, then uncover, and remove as much liquid as possible. Return to oven uncovered and bake another 15 minutes. Source: I adapted this recipe from Dave Liebermans recipe, "Bubbys Meatloaf". You can cut back on the onions, black pepper and cayenne pepper a bit.--Ann Great with whipped potatoes (I like to add butter, milk or Half & Half, salt & pepper and a little garlic powder, to boiled potatoes, then whip in electric mixer until very smooth).

I thought I had a can of condensed milk in the cupboard but I don't. I'll pick one up tomorrow.

I've been craving lemon and just bought 2 pieces of lemon tart from a store bakery today, but this looks much better. I have a question - do you whip the sweetened condensed milk with the lemon juice and the vanilla? What makes it set up when it's baked? There aren't any eggs in the recipe. (I don't have much experience in the baking department).

Seagrass....no you don't have to whip anything, just stir the condensed milk together with the lemon and vanilla until it's combined.
It thickens by itself with the action of the lemon on the milk.

It ends up after baking and cooling as a soft fudgy topping.

Very rich and delicious!

I just made recipe - took it out of the oven a few minutes ago. I did not have a 9 x 9 square pan, so I used a 9" round cake pan. I started out by making the crust by hand (crushing the graham crackers in a ziplock baggie with a rolling pin) but the crumbs seemed too coarse. And when I tried to mix in the brown sugar, it didn't seem to be integrating very well. So I dragged out my big food processor and used the steel blade. I pulsed together the graham cracker crumbles, the brown sugar, salt and the baking powder and then I added a stick of room temperature butter and processed until it was all uniform. I used the bottom of a round glass to tamp it into the pan. I also found that a wire whisk worked better than the wooden spoon I first tried for incorporating the lemon juice into the sweetened condensed milk (but I didn't whip it). I baked it for the full 25 minutes. I can't wait to have a piece of it after dinner tonight.

I don't make desserts or bake very often, so here are a few things I learned:

There were three individually wrapped packets of graham crackers in the 14.4 oz box of Nabisco Grahams and one packet made the required 1 1/2 cups of crumbs for the crust.

When I went to the store to buy the sweetened condensed milk, there weren't any 10 oz. cans so I bought the only size they had which was 14 oz. but that turned out to be by weight. It measures 10 liquid ounces so I used the whole can.

Also, just for reference, I was able to get 1/2 cup of lemon juice out of 2 large fresh lemons (I bought 6 - who knew?)

We had this for dessert tonight. It's delicious and so rich, now I understand why the original recipe called for cutting it into 36 squares! But since I had to bake it in a round pan, I cut our pieces into tiny wedges.

Could anyone who has made the recipe tell me if the crust is supposed to be as dense as it came out in the food processor? Or if you make it somehow by hand, what is the consistency of the crumbs and how do you make it happen?

Seagrass to make the crumbs I put the biscuits into a plastic bag and rolled over it with a rolling pin, over and over until they were fine crumbs. Then I mixed them with the other ingredients in a bowl and then packed them into the pan, using the back of a round soupspoon as well as the bottom of a drinking glass to pound it all in firmly.

It will have a few crumbs when you cut it out of the pan in pieces. I've never used my food processor to make crumbs and if I can't find my rolling pin, I just use a bottle of wine (unopened) LOL to crush the biscuits.

You're welcome Carol. Not my recipe of course, as it came from a 1981 cookbook "150 Delicious Squares" from a series called "Company's Coming" written by Jean ParÃ©, a lady from Alberta whose recipes were collected from Canada and around the world.

The copy I have was signed by my mom and given to me ...'with love at Christmas 1990'.

We did our best eating the lemon squares, but they were very rich and there were only 3 of us, so I decided to put the rest in the freezer. I don't know how they'll taste but I sure didn't want to waste them! Has anyone frozen these before?

Ours didn't make it past day #2....LOL

I'm making them again Saturday for a party, cutting small pieces, and putting them in little paper cups--almost like candy. Perfect little dessert bites! :)

I've never frozen them, but it's true they are meant to be served as a small square rather than as a dessert because they are so rich.

But once I did cut them into larger pieces and served them with whipped cream. That was some dessert LOL!
