homemade ice cream

I just made ice cream which cost me a fortune. The recipe called for 18%cream ,whipping cream and 6 egg yolks. How can i make ice cream that's not so expensive and not so fat...Also do you really find a difference with pure vanilla..

I have a creamy ice cream recipe that came with my maker. I can post the recipe when I get home tonite (no eggs).

Hi Claire,
Ina Garten from BareFootContessa has a recipe with egg whites and fresh yogurt. You can use the yolks for pasta making...Beat the egg whites with some sugar at soft peek, fold into the low fat yogurt (any flavour,she used lemon)and put into the ice cream machine.

We have a hand-crank Donvier we got when we were married in 1995 that is almost constantly in use from about the 4th of July to mid-September. (The brand-name one is overpriced. Get a clone, which can be had for under $20 on sale.) DH wants an electric and I may get him one for his birthday (which is 2 days after Christmas LOL) if end-of-summer sales yield any REALLY good prices on reliable machines. Here's the base recipe we use, from the Ben & Jerry's book... I don't think you could GET any simpler, and it's surprisingly good. We pretty much never use a custard base because our kitchen is not air conditioned, and diddling around making custard in a 90-odd degree kitchen is officially Not Worth It in our book. For a 1 quart ice cream maker, combine 1 can sweetened, condensed milk (many of us remember it as "Eagle milk") with 2 cups light cream, a splash of vanilla extract and a pinch of salt. Do NOT leave out the salt! Stir well, chill at least 2 hours before putting in the ice cream maker. You can substitute full-fat ("cream top") vanilla yogurt for half the cream but it doesn't really save you much calorically, just does interesting things to the flavor and can make you feel a little virtuous LOL! Lower-fat yogurts give a strange chalky texture and unsweetened yogurt makes for very sour product. (Found from unpleasant experience that just chucking a quart of yogurt straight from the container into the ice cream maker, no matter how yummy it is normally, does not make nice frozen yogurt, oh no not at all!) There's a simple plain base, now start playing... A super easy way to get a delicious fruity flavor ice cream is to substitute 1 cup of a good strong jam for 1 cup of the cream. (I don't recommend doing both jam and yogurt and eliminating all the cream. The result came out... the only word I can find for it is "stretchy".) The jam concentrates the fruit's flavor; warm "seedy" jams like raspberry or blackberry until they're liquidy and push them through a strainer if you don't want to be picking seeds out of your teeth for days. If you want fruit pieces, line a cookie sheet with the nonstick foil or baking parchment (or a Silpat if you're blessed with one), spread out a layer of finely chopped fruit with the pieces not touching, or minimally touching, and freeze rock solid. Add the fruit pieces at the very end of churning. Toast any nuts you wish to add for a stronger, "nuttier" flavor; and grating frozen chocolate bars on the largest holes of a grater (use an oven mitt to hold the chocolate so your body heat doesn't melt it) gives a better result IMO than using chocolate chips, even the mini kind. If you want to use something like butterscotch chips, freeze them and break them up in small batches in a food processor on "pulse". Good use for one of those mini-chopper types. Remember that your liquid ice cream/sorbet/yogurt mixture has to be almost sickeningly-sweet in its unfrozen state to taste "normal" as a finished product - the cold numbs your taste buds so all the flavors have to be STRONG. Oh, and filling the churning chamber more than about 2/3 full, 3/4 at the most, can be a recipe for a Big Sticky Mess. So don't do it. Honey-sweetened ice cream does not store well more than 24 hours - it gets crumbly and weird-textured, so if you want to do something with honey, have enough people around to scarf it down within hours of curing. Alcohol will interfere in the solidifying process so if you really load it up even with an overnight cure you may not get more than a "soft serve" texture. We bought a whole slew of nice little (not quite 1/2 cup) lidded plastic containers into which we portion the ice cream while it's still in the "soft serve" state. Pop them in the freezer and in 4 hours it's solidified enough to have the proper ice cream "mouthfeel", although I like 8 hours' curing time. If we don't pre-portion it DH will go WAY overboard! Oh, and the famous Mark Bittman/New York Times "eggless ice cream" was IMNSHO utterly REVOLTING.

Thanks for filling in the gap between the two numbers Annie. Like Annie, I eat foods with raw eggs and prefer my steak and even my hamburgers (which are more risky because when you sear a steak with the inside medium rare, the inside was never exposed directly to external contamination but the some inside of your hamburger was on the outside) medium rare. And I eat raw fish in sushi. So far the only two times I've had food poisoning were when I was on business trips. The more recent time, nothing that I had eaten was a typical suspect so my guess is that the restaurant wasn't careful enough about cross contamination or had an employee not washing hands carefully enough. And we use to make quick eggnog (milk with a raw egg and some vanilla in the blender) for my kids one of whom went through a period as a very picky eater so it was one way to get some protein into his diet at the time. I also keep in mind that it the higher the bacterial load the more likely it is to make you sick. A few salmonella cells in a raw egg that has been kept refrigerated will probably be fought off by my immune system. I wouldn't for instance make eggnog, let it sit on the counter for half a day and then drink it. Just in case (IIRC the likelihood that an egg carries salmonella was something like 1 in 20,000) the egg had salmonella, I don't want to let something with raw egg sit at a danger zone temperature for an extended period of time. Ice cream has an advantage there - you know it has been kept cold since it was made. On the other hand, if I had guests over, I would at least let them know that there was raw egg in something and have an alternative because I think they should be able to make that decision for themselves and who knows who has a compromised immune system. And my son and DIL don't want my granddaughter to be fed food with raw eggs. Since children under 5 have salmonella diagnosed at a higher rate than adults (perhaps because it takes less to get them dangerously dehydrated or because they have less immunity?) that seems to be a sensible precaution. I've put in the link for how to cook eggs enough to kill salmonella while still being able to use them in raw egg recipes. This is a compromise for those who need it. I remember reading that someone tested the pasturized egg whites vs regular egg whites and they didn't whip to as much volume. That link also mentions using acidity to kill salmonella. You have to get the PH down to 4.0. If you make mayo and let it sit for a while before you mix it with something else, that may do it. Just tossing some lemon juice along with the egg into your ice cream mix probably wouldn't because the acidity of the lemon juice would be diluted too much by the other stuff. Definitely good for a week. But since mine never lasts much longer than that, I just Googled it. This is from David Lebovitz's site, and he checked with the FDA, so that's two pretty good authorities: A reader recently wrote to ask, "How long does ice cream last in the freezer?" Oddly, I never gave it much thought since it doesn't seem to linger too long around here. So I looked around and found the answer at the FDA website: 2-4 months. The most common problem when ice creams and other frozen desserts spend too long in the freezer is the texture changes and if not covered properly (ideally with plastic wrap on the surface, then covered with a lid), they can get icy and pick up other flavors from the freezer. If they do get icy, most sorbets and sherbets can be melted down and re-churned, as can Philadelphia-style ice creams made without eggs. But I find custard-based ice creams don't re-freeze as successfully, so don't let those sit around too long. Putting plastic wrap on the surface to protect against the air inside the plastic container is smart. That's what I do with pesto, so why not ice cream?

Yes, pure vanilla is one of those things where the taste difference is very noticeable. I make my own extract. Slice a vanilla bean lengthwise. Stuff bean into pretty small bottle. Fill with vodka. Put bottle in dark cabinet. In 2 months you'll have a very good extract. You can use it sooner. I just find 2 months provides good strength.

Don't eat ice cream so can't help you with that question but I agree with you...that's a powerfully fat laden recipe. Is it good?

I'll bet it's delicious....I would use 1/2 and 1/2 instead of heavy cream....but always pure, real vanilla extract....always.

My favorite low fat ice cream is cornstarch ice cream. I've tried this one and it turned out very good. You can use this basic recipe to make different varieties.

I make David Lebovitz Philadelphia Style from his book The Perfect Scoop.

Philadelphia Style Chocolate done by Dinner and Desserts

The vanilla one is the one I make the most. I have used 1 c of cream and then whole milk for the last 2 cups. Usually I do 2 cups cream and 1 cup whole milk.
My guys like it with Sol's Brown Sugar Chocolate Chip Cookies broken up and churned in.

there ya go. what terri said. If you want a quicker easier (but not as rich!) ice cream, do the philadelphia style.

One of my recipes for Vanilla Ice Cream

4 large eggs
2 c. sugar
1 qt. half n' half
2 T. Vanilla
Milk added to measure 3 quarts

Beat eggs & sugar until light & fluffy.

Add half n' half to egg mixture in a large saucepan. Cook over low heat until thick. Let cool

Add vanilla and enough milk for the total volume to equal 3 quarts.

Chill thoroughly & freeze in ice cream freezer.

Note: I occasionally add a container of Cool Whip to the chilled mixture just before churning.

And another one from my MIL:

Ambrosia Sherbet

6 oranges
2 lemons
1 small can of crushed pineapple
4 bananas, mashed
1 can evaporated milk
3 c. sugar
1 gallon milk

Juice oranges & lemons. Combine all ingredients & freeze in ice cream freezer.

Time to dig my kitchenaid ice cream maker attatchment out of the deep freeze! Terri, I'm going to try that Philadelphia Style Chocolate ASAP.

Clair, have you seen the Ben and Jerry's ice cream cookbook? I got it when I got my ice cream maker and got a lot of good recipes out of it. You may even be able to find it at your local library.

I bought the Ben & Jerry's Ice Cream book when I got my ice cream machine. I have only tried the vanilla and strawberry and they were delicious. I used base 1 both times.

I am home sick with a cold and still in my jammies so I typed up the 3 base recipes from their book for you guys.

Sweet Cream Bases
Ben & Jerry

Base 1 Â 1 quart
This is our most popular base, has creamy texture, medium body, and a subtle, understated taste. ItÂs especially good as a background for fruit, cookies, and candy.

2 large eggs
Â¾ cup sugar
2 cups heavy or whipping cream
1 cup milk

Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream and milk and whisk to blend.

Ben & Jerry French Vanilla

Add 2 teaspoons vanilla extra to the above recipe. Add with the milk.

Base 2 Â 1 quart
It makes a very creamy ice cream with 25 percent butterfat, but it does not store well in home freezers, so be prepared to eat it all.

2 cups heavy or whipping cream
Â¾ cup sugar
2/3 cup half-and-half

Pour the cream into a mixing bowl. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the half-and-half and whisk to blend.

Base 3 Â 1 quart
This recipe makes a less creamy, less rich ice cream. Ben likes the slightly "cooked" flavor of the sweetened condensed milk.

2 cups light cream
1 cup sweetened condensed milk, cold

Whisk the light cream and the sweetened condensed milk together in a mixing bowl until blended.

I just bought that Ben & Jerry's book last weekend. I can't wait to try some of the recipes in it.

I am afraid once I start you all will not recognize me, as I am sure I'll tip the scales! LOL

Now I need to find an ice cream maker. Rather than hijack this thread, I'll start a new one for suggestions.
