First spelt bread (to get to the table, anyway)

This is my second loaf of spelt bread using the recipe from Bread Machines for Dummies that Grainlady gave in an earlier post. Before I did more than sample a small wedge of one crust, my dog snagged the first loaf off the island and ate the whole thing--except for the bread bag ;-)

I didn't have quite enough spelt flour for this one, so subbed 1 cup bread flour and 3 cups spelt flour, increasing the water by one tablespoon. I think I should have added another Tbs.

Anyway, it makes DELICIOUS toast:

Baked in the Zoji with spelt flour from Nuts.com. I have NO idea what different breads should look like, but I am certainly pleased with the results from the Zoji. Thank you grainlady and others for making this possible. Store bread seems almost inedible now--and the dog agrees.
