Comments (35)Fluffy Tapioca 1 egg, separated 6Tbsp. sugar, divided 3Tbsp. MINUTE Tapioca 2cups 2% reduced fat milk 1tsp. vanilla Make It BEAT egg white in small bowl with electric mixer on high speed until foamy. Gradually add 3 Tbsp. sugar, beating until soft peaks form. MIX tapioca, remaining sugar, milk and egg yolk in medium saucepan. Let stand 5 minutes. COOK on medium heat, stirring constantly, until mixture comes to full boil. Remove from heat. Quickly stir egg white mixture into hot tapioca in saucepan until well blended. Stir in vanilla. Cool 20 minutes; stir. Serve warm or chilled. Comments (29)DC, I realized the Bob's Red Mill pearls weren't going to be as large as the truly large pearls. But I thought that product would be an alternative to those who seemed to be having problems locating any larger pearls in the first place and also having problems preparing the imported ones correctly. Since Bob's claims their "Small Pearl Tapioca is used to make traditional old-fashioned tapioca pudding, an all-American favorite dessert.", I thought perhaps the preparation would be closer to what some people were remembering. I use instant tapioca about once a year when I make rhubarb sauce, and that's it. I know it's terrible to confess, but if I ever get the hankering for tapioca pudding, I just pick up some Kozy Shack from the grocery store -- usually a couple of times a year, especially when I'm sick. Comments (16)Not sure what went wrong with Dawn and Annie's. I heat the pan in the oven, pull it out and add bacon drippings or butter while it is resting on the stovetop...pour in the batter after getting some of the oil/butter up the sides a bit with a swirl. Pour the batter into the center will push the butter to the edge. The flat baby above is just not enough batter for the size of the pan though still tasty and some like it that way. Just another version of a GermanPancake aka DutchBaby. An extra egg white is a good idea Lindac. A great weekend houseguest treat. As everyone is waking up or returning from a hike or walk...i rotate from sweet to savory and make a few having two 8" cast iron pans....See Morerob333 (zone 7b)
