caramelized beets

My boss asked me how to make caramelized beets. He doesn't have an oven, so roasting is out. Does anyone have any recipes they like?

I really dislike canned beets... and I've never cooked with beets. I recently discovered that I do like roasted beets in small quantities, so I think caramelized beets sounds interesting, perhaps even yummy. I may have to try them! A Google search served up several recipes. You say your boss doeesn't have an oven, here's one done in a sautee pan....

Thanks, Bizzo. I did do a google search, and told him that's what he should do, but I figured this bunch could or would have their own T & T recipes. I thought just slow cooking in a skillet would do the job, just like the recipe you posted.

Sally, I know you didn't ask, but could you suggest to your boss that he get a microwave/convection oven combo? Or even a toaster oven? It would greatly expand his cooking options. I bought the Sharp microwave/convection from Walmart for about $200. It works quite well in each mode.

Actually, I did suggest to him to get a toaster/convection oven. He's quite the tightwad, and is worried about the electricity use and the small size of it. Oh, well. All I can do is make suggestions and let him decide.

If he won't, he won't. But if you get the opportunity to gently introduce the topic, you might work into the conversation that cooking at 350 degrees for one hour in an electric oven costs 34 cents, assuming a kWh of $0.169 which was the cost per kWh according to the Bureau of Labor Statistics for the Philadelphia area in November 2011.

Per Consumer Energy Center an electric oven at 350 degrees for one hour uses 2 kWh.

But again, this may not be a topic that you want to introduce with your boss.
