veggie tray to soup pot - ideas?
Comments (3)Here is a really simple Cream Of Broccoli soup recipe that I make occasionally. However it doesn't have cheese in it. Cream of Broccoli Soup 2c water 8oz fresh broccoli (diced) 2 oz carrots (diced) 3 oz butter 2 tsp instant chicken broth or boullion 1 small onion, minced 1 tsp salt ¼ tsp pepper 2-1/4 c milk 4T cornstarch In medium saucepan combine first 8 ingredients & bring to a boil. Cover and simmer until vegetables are tender. Add 2c milk. Mix remaining milk and cornstarch in small bowl, slowly add to hot soup mixture. Heat until creamy, do not boil. Serves 6 Or if you want a hearty soup with meat, here's a really good one that will use up some of your carrots and celery. Turkey Spaetzle Soup Source: Betty Crocker 2T vegetable oil I large onion, finely chopped 1 medium carrot, finely chopped 1 stalk celery, finely chopped 1 clove garlic, finely chopped ¼ c all purpose flour 2tsp dried thyme 1/4 tsp black pepper 2 c diced, cooked turkey 6 c chicken broth 1 bag (12oz) frozen spaetzle Chopped fresh parsley (optional) In 4qt saucepan, heat oil over medium high heat. Add onion, carrot, celery and garlic, cook until crisp\-tender, about 2 minutes Gradually stir in flour, thyme and pepper, cook 1 minute, stirring constantly. Stir in turkey and broth, heart to a boil. Stir in spaetzle. Cook 2\-3 minutes, stirring occasionally. Garnish with parsley, serve. Yield: 6 servings (1\-3/4 c each) Per serving: 240 calories, 10g total fat, 70mg cholesterol, 17g carbohydrate, My notes: I canÂt get frozen spaetzle so I made my own. Comments (18)Different levels can help in display and presentation. Instead of everything placed on a level tray, try inverting bowls or placing blocks on the tray, covering with a linen napkin and going from there. A little judicious glue gun action helps. Also, with all the stone countertops going on the fabricators have lots of chunks, cut offs and small pieces available for pretty cheap. A big (for veggie platter) slab of honed granite makes a pretty impressive display and you can still do multi levels on that. I'm not talking a tower, just give it some 3D action. And put some darn radishes on it!!! No one seems to ever put radishes on a veggie tray and I'm so happy when they do. I'm sure I'm not the only one....See MoreA couple of veggie questions...
Comments (7)I've never grown broccoli so don't have an answer for you. It is a cool season plant meant for spring or fall harvest so it may indeed bolt at this point. I am still harvesting lettuce and peas but probably not for much longer - got a late start with both and provide the lettuce with shade during the hottest part of the day (put up a frame with shade cloth attached to it) and that seems to be helping it to keep producing without bolting, Maybe you could try that with your broccoli?? I don't think anything is eating the leaves of your cucumbers, squash, etc. That looks more like symptoms from a fungal or bacterial disease to me. Comments (26)All of the ideas above look absolutely awesome. Since you have decided on a salad, I wanted to share what I have done several times lately - a very simple antipasto salad. I make it in a 9 x 13 type dish - I have a few that are a nicer than Pyrex, but Pyrex would do as well. It helps people get it out easier - or a large platter would do well too. Chop up romaine, spinach, red leaf, whatever kind of lettuce. Make it small enough so it doesn't need to be cut further. Then top it with green olives, black olives, quartered pepperoni, yellow peppers (the ones in the jar - I use mild), chickpeas, quartered artichokes and cherry tomato halves. I sometimes cook tortellini and throw that in. Then top with some shaved parm cheese. I even buy the stuff already shaved. It is so pretty - and so easy. My family likes Olive Garden salad dressing. I am not a fan of it, so I always have some Italian vinagrette as well. I make this salad and there is never anything left. Enjoy your party!!!...See Morediinohio
