What is Cream Sherry?

Hi Everyone,

I saw a recipe for a seafood dish and it calls for 1/4 cup of cream sherry? What is this? Is it found in the supermarket or is it liquor found in the liquor store? Is there a brand name I should be looking for? Thank you.

I'm not a sherry expert, but I am familiar with dry sherry, sweet sherry and cream sherry. Of these, cream sherry is usually used in dessert dishes - though from your recipe, obviously in seafood recipes too! If you have it, just use a sweet sherry instead, though that's mainly used in dessert recipes. I'd be inclined to use a dry sherry which is what I use (or used to use, when I cooked!) in Asian dishes.

I've found cream sherry in the grocery store, but it depends on the wine section. I've also found it in the wine section at our local chain drug stores, but admittedly I haven't looked recently (since SavOn became CVS).

Jessy--I make teriyaki sauce with pineapple juice, brown sugar, a little soy sauce, sherry, garlic and ginger. Finely chopped green onions if I have them. That's what I came up with years ago when trying to copycat a dish that I had in a restaurant. Took me a while to stumble onto sherry as being the missing ingredient for the recipe I was trying to duplicate. May be that it's wrong but, what the heck, I like it! I've never tasted mirin. Will look for it the next time I have to ferret out a bottle of sherry. I've noticed quite a few recipes that call for it. I'm not into wine much at all--slowly starting to use whites & reds for cooking. Don't care to drink it at all. Except for Asti Spumante or a white mixed w/ Sprite for a wine cooler.

Kathleen, here's the recipe for the peach bread. Fresh Peach Bread 1 1/2 cups granulated sugar 1/2 cup butter 2 eggs 2 1/4 cups pureed peaches 2 cups all-purpose flour 1 1/2 teaspoons ground cinnamon 1 teaspoon baking soda 1 teaspoon baking powder 1/4 teaspoon salt 1/2 teaspoon almond extract 1 1/2 teaspoons vanilla 1 cup dried cherries 1 cup chopped pecans or walnuts In a large mixing bowl, cream sugar and shortening until light. Add eggs and beat well. Add peach puree and dry ingredients. Blend well. Stir in almond vanilla, dried cherries and chopped pecans and until blended. Pour into two greased and floured 9x5-inch loaf pans. Bake at 325Â° for 55 minutes to 1 hour, or until a wooden pick or cake tester inserted in center comes out clean. Let bread cool for 5 minutes before removing from pan. Cool completely on wire racks Makes 2 loaves or peach bread. No recipe for the Cherry Peach Salsa, that was from American Spoon. May, Linda...we are on vacation at PFPP. We will be lucky to get anything on the table :P Guess I'm done posting pic's until I get a new camera. Sherry Sour Cream Chicken Allrecipes.com "An easy and delicious way to prepare chicken breasts. Works best with skinless AND boneless breasts, but breasts with the bone in will also work. Adjust the seasoning to taste." INGREDIENTS Â 4 skinless, boneless chicken breasts Â 1 cup sour cream Â 1/4 cup sherry (I would use HarveyÂs Bristol Cream) Â 4 tablespoons butter Â 1 tablespoon chopped fresh rosemary Â 2 tablespoons chopped fresh thyme Â salt and pepper to taste Â (I would also be adding onions and mushrooms to this dish, for more depth of flavour) DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a large skillet, saute chicken in butter/margarine until browned. Remove chicken and place in a 9x13 inch baking dish. (This is where I would then sautÃ© up the onions and mushrooms.) 3. Add sour cream and sherry to butter/margarine in skillet. Stir together until smooth. Season chicken with rosemary, thyme salt and pepper to taste. Then pour the sherry/cream mixture over the chicken. Bake in the preheated oven for 1 hour.

Wild Mushroom Soup with Sherry Â 3 tablespoons butter, room temp Â 2 tablespoons butter, melted Â 4 tablespoons all purpose flour Â 1/2 cup sliced shallots Â 1/2 cup chopped onion Â 2 cloves garlic, minced Â 3-4 cups sliced mushrooms (can use a combo of shitake and button) Â 1 teaspoon fresh thyme Â 1 bay leaf Â 1 cup dry sherry Â 3 cups chicken stock or canned broth Â 1 cup half & half or heavy cream Melt 3 tablespoons butter in large pot over medium-high heat. Add shallots and onion and sautÃ© until onion is translucent, about 8 minutes. Add garlic for 30 seconds, and then add mushrooms and thyme, sautÃ© until beginning to soften, about 4 minutes. Add sherry. Boil until liquid is reduced to glaze, about 6 minutes. Make a roux-mix remaining 2 tablespoon butter and 4 tablespoons flour in small bowl until smooth paste forms. Add flour paste to mushroom mixture in pot; stir until mixture melts and coats vegetables. Gradually mix in stock. Bring to a boil, stirring frequently. Reduce heat to medium-low and simmer until mushrooms are tender, stirring often, about 10 minutes. Stir in cream. Season with salt and pepper. Take bay leaf out. Puree about 1/3 of soup in blender until smooth. Return to pot. Can be prepared 1 day ahead of time. Cover and refrigerate. Re-warm over medium-low heat before serving.

sherry is a wine that after fermentation it is fortified with brandy.

the one you might be familiar with would be harvey's bristol cream (?) in my state, we have to go to a liquor store, but i know other states you can buy alcohol in the grocery markets.

As Maryanne said sherry is a wine that is fortified with brandy, contains slightly more alcohol than say, chablis, and consequently has a longer shelf life.
Sherry comes in 2 varieties, sweet or creame sherry and dry or cocktail sherry. It is a regular wine not a cooking wine...although you might find some laced with salt in the vinegar section of your grocery store....don't buy it it's nasty!
You will find sherry whereever you can buy wine. It gives a very distinctive taste to foods. I like it in cream sauces, mushroom soup, some seafood dishes and a certain chicken stew I make.

The nice thing about cooking with real sherry is that you can drink it too! Clive loves cream sherry on the rocks after dinner.

I use sherry in my French Onion Soup and in several Chinese dishes , I also use it in seafood dishes, not fish but lobster, shrimp, crab etc.

I use what ever I have, cream or dry, interchangeably in cooking BUT never, ever, use the the stuff you find in the regular food section of your grocery store. Truly it is nasty stuff.
