Oil Less Turkey Fryer

Hi All,

I had fried turkey for the first time this past Thanksgiving and it was delicious. I have to have one.

This one was done the old fashioned way but I was wondering if anyone has tried the oil less/infrared turkey fryers and what you all thought?

Does it taste the same as the one with oil? Is it easier than the one with oil?

As I understand, there is no such thing as oil-less fryers.

They are all bakers/roasters.

They will give you the same taste as baked or roasted birds.

I guess that was my question.

But they do say they are a fryer. I wonder how they get away with that?

Has anyone ever tasted a bird cooked in one of these.

Mines not a turkey fryer but same concept, big pot of oil heated by propane burner. One of our favorites is beer battered fish, french fries, and hushpuppies. Have also done large batches of battered shrimp and clam strips for parties. Live on the lake so a good old fish fry happens several times a year. Good Stuff! David

I don't refrigerate the deep fry oil. Bacteria is not likely to survive the >370F temps. The oil is not kept around long enough to go rancid. That's my experience, anyway. But I don't see the need to refrigerate any oil, so possibly my nose just isn't that sensitive or I tend to use oil that is more stable. On the Waring, the tub is simply a rectangular stamped steel tub with a lip. There is no cover, I suppose you could use plastic wrap if you were going to refrigerate it, but it would be a pretty bulky thing to put in the refrigerator. Versus an ordinary pot . . . - The fryer doesn't take up a burner, during the days when I'm not using the oil but haven't put it all away yet. I only have four burners. - The tub is a relatively deep and narrow vessel, so you can get coverage with a reasonable amount of oil. - The fryer basket is a handy way to load up your tempura/whatever, neatly immerse it in the oil all at once, remove it all at once, and drain it over the oil before tranferring to paper towels. It is just a convenience thing. I can't imagine the deep fryer does anything a pot couldn't.

Of course we have one, we bought it at that on-line auction Elery has such a good time with. It cost $10. It makes a darned good turkey. I've never had deep fried turkey, so I can't say whether it tastes the same or not, but it makes a good turkey. Elery says it's "a lot like" fried turkey, if that helps. Annie

Thanksgiving is the only day we eat turkey. The rest of the time, give me a roast capon or a duck prepared almost any way at all. DH and I are just not turkey lovers. My niece makes a very fine brined and roasted turkey, but once a year is enough for us. We're sauce and gravy people. Stews, braises, casseroles - we love them. I do a fair amount of cooking and a lot of dining out, and we hold that a fine sauce is a work of art. Even though we eat a lot of steaks and roasts, a great sauce is always to be admired. There are too many bad ones around to not acknowledge when something is done correctly. One of our favorite restaurants does a great poached monkfish. This is the fish known as "the poor man's lobster" for both its taste and texture. It's a great little fish, with wonderful flavor. But nap it with Amoricaine sauce, and it rises to a whole 'nother level. This is a Bretonnese classic, and for good reason. Red wine and marrow Bordelaise on a rib-eye? Absolutely! Black truffle cream sauce on a filet? Yum! Mop that goodness up with a well made starch - roasted fingerling potatoes, barley risotto, fresh pasta, freshly baked bread rolls. Gravy and sauce was the way to extend meat to feed a lot of people. Most of the world still loves sauced dishes as treasured childhood memories. Like soup, they are warmth and comfort, soothing and homey. Chicken strips that are velveted and steamed with lop cheong sausage (classic Chinese technique) are stunningly tender, almost as soft as sous vide but we like the flavor and texture better. Perfect with a roasted garlic-oyster sauce gravy over lots of rice! Far better than stir-frying or roasting. As Charles Phan of The Slanted Door restaurant in SF points out in today's WSJournal, steaming is considered the ultimate test of a professional chef in Asia. Getting back to the NY Times' and Pepin's suggestions for steaming, one of the greatest dishes in Chinese cuisine is steamed sliced chicken breast with thin slices of Hunan ham. My mother introduced me to this dish (she took classes from one of the leading Chinese restaurateurs in San Francisco) and it still ranks with DH and me as one of the three finest poultry dishes we've had in our 45 yrs of dining. A glaze should always be light. Heavy-handedness is the mark of a bad cook. Peking Duck would not be the same without the glaze applied, for example.

I have had a Big Easy for 5 years and it tastes almost the same as deep fried. Some people like it better.

It does actually fry in it's own fat, the infrared is what makes the difference over baking and roasting. That is why they can call it fried.

You have the crispy skin and moist meat like deep fried. Without $40 worth of peanut oil that may go rancid before you use it again.

A suggestion if you decide to get one. Cover the breast and wings with foil for the first hour, leaving the back and lower parts exposed. Then remove the foil, the white meat cooks faster than the dark meat.

Ahh.. Fries in it's own fat. That makes sense.

I don't understand how that works? Turkeys don't have much fat. Just the skin, and that is very little fat relative to the quantity of meat.

No. It does not make sense. It is a vertical broiler, baker and roaster and no more. Yes, it can make the skin crispy, just like your oven can.

I will not spend the money for that if frying is what you want. It does not have much fat to fry itself. Fat rendered in that drips down quickly under heat.

BTW, broiling is cooking with infrared heat, infrared heating is not the same as frying.

I meant to put "fry" in quotes. You are correct, it doesn't have much fat. I inject mine with a butter and herb mix which adds fat.

I've tried the vertical broiler, baker and roaster things, you know the, "set it and forget it". They are more expensive and IMHO the results are not as good.

All of the electric broiler, baker, and/or roasters that I have used aren't even in the same class. I have never tried a gas oven.

Gas just heats better IMHO!

I'm not trying to talk the OP in to buying one but I love mine!

It actually is a useful cooker for some types of cooking.

For some food, the vertical cylindrical surround infrared heat source broils the food more evenly.

I agree!

It works great for ribs and roasts too!

I bought the hangers for ribs, no more uneven cooking.
