It's a new year and since WFD 323 is almost at 100 posts, I thought I'd start a new thread.
The thread about fried chicken started a craving, so that what we had for dinner tonight. Sides were simple, mashed potatoes and gravy and home canned yellow beans. Comfort food all the way!

| Nice way to start the New Year Nancy. I might have to make Fried Chicken soon. John's fried chicken thread gave me a craving for it too. Matt is here for a few days and I've been feeding him his favourite meals. We had Asian Lettuce Cups Monday night, beef stew with dumplings Tuesday night, Chicken Souvlaki with Greek Salad last night, and, tonight we had beef, almost the same dinner we had New Year's Eve.
Matthew loves Yorkshire Puddings so that was the excuse
for roasting a small New York Strip Roast. |

| I made the Provencal version of the nine recipes for chicken that Alexa posted a while back on some thread about easy meals or chicken breast cuisine. I added fresh ground pepper and a bit of garlic to the very simple, yummy recipe. I steamed some red potatoes which were adorned with dill, pepper and butter. Frozen peas completed the plate. Peas because I forget to get a fresh green veggie while I was out. But now I want fried chicken (won't happen - fear of frying) and popovers. |

| John and Annie, your dinners look and sound delicious. The others are ok, too. ;-) Last night I had the pulled pork ragu that bbstx posted about. We really liked it. The semolina gnocchi wasn't what I'd call gnocchi; maybe I did something wrong (aside from making them too big!) but it was more of a light dumpling. Very tasty though, and definitely worth the effort. Only real comment is that there was way too little sauce. Even with a second can's worth of tomatoes added to it, I didn't end up with a soupy dish like the original recipe shows. Thanks bbstx, I second your recommendation!

Last night was spaghetti with meat/mushroom sauce. Today DH and I are starting our diet....South Beach.... We did it several years ago and it worked great. Treadmill here I come. Linda |

| Nancy, your fried chicken is comforting to the tummy as well as to the eyes. Ann_t, the Yorkshire puddings pop right out of the screen, and your medium rare roast is very well done ("well done" as in expertly prepared LOL!) John, Recipe please. LOL! FOAS, what a nice pairing, pulled pork with semolina gnocchi. ---------------------------------------------- Holiday cooking can be exhausting (mentally). No cooking, just leftover meals. Leftover Hanukah meal - Frozen brisket sous vided back to medium rare on rejuvenated wild rice bread. Leftover Christmas meal - Frozen rib roast sous vide back to medium rare with muchroom sauce. dcarch

| Ann, the Yorkshire Puddings look great. Eileen your dinner sounds lovely, I would like it. Stumpy, pork ragu....yum. yum. Linda, just mentioning spaghetti gives me a craving. Dcarch, nothing wrong with leftovers as far as I am concerned. I even plan for them at times. Saturday night we had a little birthday dinner for a friend. His B-day was Jan 2 and Kim's is Jan 11. They both love lobster so we schedule a lobster dinner between the two birthday's. We started with a wedge salad
Lobster tails just out of the oven. These were 1lb tails.
Plate full of food...spinach, baked potato roll...
The birthday cake was Boston Cream Pie
Sunday we just snacked, just too full from the rich food. I had a salad with some leftover lobster on it and so did Kim. Today I made a new recipe for Beef Barley Soup. It was nice and thick, great seasonings and made a good dinner in a cheddar cheese bread bowl.

| Nancy, you're killing me, that birthday dinner looked heavenly! Actually most of the meals (save John's) looked attractive. John, no disrespect, it's often not much better over here either-- LOL! I made dinner at home tonight for the first time since...Tuesday or last Monday? Not sure. We were in the desert for a few days and out & about yesterday, so tonight it was easy, but homemade. Dinner for me was a broiled chicken breast and for DH an Asian stir-fry. Both of us enjoyed artichokes and for dessert a new coffee ice cream. Definitely not on the healthy eating plan, but comfort food for us! |

Wow everything looks so good. Well tonight we had Salmon in a ginger/soy sauce (DH caught a 35 lb Salmon last month) red cabbage and snow peas.

| FOAS, I love the idea of the gnocchi as more of a light dumpling. Which recipe did you use? Nancy, what a feast. Your lobster dinner looks amazing. And Boston Cream Pie/Cake is one of my favourites. Love the thick custard centre. Salmon in ginger sauce. That sounds good Linda. We had Italian Roasted Chicken with a side of pasta for dinner. This is my version of a dish we use to order in an Italian restaurant in Sault Ste. Marie, Ont. A simple dish.

| Okay I must confess, I was especially lazy last night when it came to dinner. I had homemade chicken stock in the fridge which I mixed with Bear Creek Chili Mix and a loaf of bread from the co-op. Complimented with a bottle of Chocolate Stout beer and some greens and my husband was happy. What can I say, it was Friday:) Kate |

| Lots of delicious looking and sounding meals on this thread to start off the new year. Last week, both ovens in my 1960's vintage range died within 24 hours of each other so I was confined to skillet dinners until the new one was installed. Under a sauce of tomatoes, onions, herbs, white wine, honey, and kalamata olives are noodles and a bone-in chicken thigh.
Chicken livers, onion and mushroom gravy over rices.
DH had already started on his plate by the time I got a chance to take a photo. Pork tenderloin with a pineapple-ginger glaze, Brussels sprouts with hazelnuts, and rice-mushroom patties.

| I always get so inspired here. Lobster and Boston cream pie! Oh my! I also made pulled pork this week. Salmon in ginger soy sounds delicious. As well as the pineapple ginger glaze on pork. Recipes, please? I need to learn to make gnocchi. I love those little pillows. Last night I made potato cheese soup. No recipe, just winged it. Russets, milk, sauteed onion, celery and bell pepper, sharp cheddar, a tab of Dijon, s&p, garlic, dill, and white wine. And sauteed some zukes with shrooms as a side. |

| Salmon in ginger soy sauce. 1/3 cup dry sherry or vermouth 3 Tbsp low-sodium soy sauce 2 tsp sesame oil 1/4 cup finely chopped green onions (scallions) 1 tsp freshly grated ginger 1 tsp finely chopped garlic 2 salmon fillets (1 pound) Preheat the oven to 400oF. Mix the sherry or vermouth, soy sauce, sesame oil, onion, ginger and garlic in a small bowl. Place the fish fillets in an ovenproof casserole dish. Drizzle the marinade over the fish and bake for 10-12 minutes or until the fish flakes easily. May substitute cod, sole, orange roughy or flounder. Enjoy from the South Beach Cookbook Linda |

| I love seeing and/or reading about what everyone is cooking. Sometimes I get into a cooking slump but lately I've been doing pretty good. I seem to do best if I plan ahead, if I don't then I draw a complete blank on what to fix. A few days ago, Kim and I sat down and made a list of entr�es that sounded good to us, that really helps. I didn't take a picture (not sure why) but Kim had a request for a pork roast on her birthday. I braised a nice pork shoulder, made mashed potatoes, cooked fresh green beans and opened a jar of homemade applesauce. It was simple and one of our favorite meals. I also made a lobster quiche earlier in the week. I had cooked an extra lobster tail just for that. Last night I made fish and chips.
Today I'm getting ready to visit my DM for a few days. Kim has asked for leftovers to eat while I am gone. So I'm making scalloped potatoes and ham for our dinner tonight and also a tuna noodle casserole for her tomorrow. That should be enough. I'm only going for a couple of days. :) I just baked peanut butter chocolate chunk cookies to take to my cookie monster DM! Nancy |

| I had to drive into Newark today to stop by school so I treated myself to visit to Whole Paycheck, which I normally don't get to very often due to distance. Have been searching for fresh escarole to use in a bean soup and none of the grocers, including WF and Wegmans, seem to have it - how can this be in an Italian-centric state? Anyway, I subbed kale at it turned out fine. Terrible photo, but the soup and a slice of store-brought ciabatta just took the chill off a very cold day. Sue

Barnmom, no real recipe but as best I could approximate what I made is: 1 small can of unsweetened pineapple juice 1/4 cup water 2 tsp. Turkish red pepper paste 1 Tbs. dark rum 1 Tbs. cider vinegar 1 Tbs. table syrup 1 tsp. fresh ginger juice I whisked all together, reserved about a couple of Tbs. for drizzling on top and then marinated the pork in it. |

| Sue - I cant find escarole either and ended up subbing kale in the white bean soup I made last week. Nancy, the lobster dinner looks delectible and I would love your Fish & Chips. Dinner tonight is left over brunch! LOL! Sometimes it just happens that way..... Crab and Leek Quiche with fried leftover baked potatoes ..... And yes, I tossed in a little Jarlsburg, and red & green bell peppers because I had them on hand.

Linda, your Salmon in a ginger/soy sauce is not going to make it to Paula Deen's table, but looks heavenly to me. Ann_t, your Italian Roasted Chicken inspired me to make a chicken dish also. ruthanna, I have always enjoy the colorful and complex dishes you can come up with. Sue, I have to disagree that is a bad picture of your bowl of soup. | Everything looks so good, but I'd have to go with Nancy's lobster tails if I got my choice of dinners, those look amazing. Well, a piece of that boston cream pie wouldn't be so bad either. OK, dcarch, you sucked me in with the spaghetti squash cakes. How in the world did you do that? Like latkes, but with squash? So far I've been pretty underwhelmed with spaghetti squash, but it's prolific and easy to grow, so if I liked it better..... Here I didn't have any of those things, but I did manage breakfast for dinner a couple of times. One night I had steak and eggs with a toasted pretzel bagel:
Another night I had steel cut oats topped with fresh raspberries and honey, and some toast:
The toast was from a loaf of the no-knead bread I made courtesy of "Grit" magazine, baked in my cast iron Lodge dutch oven:
It was good with a lovely crackly crust, but it had to sit and take up counter space for 18 hours, then "rest" for a couple more, definitely not something I'd make on a regular basis. Elery and I made 30 pounds of Italian sausage, and we stuffed 20 pounds into casings, froze 10 pounds in one pound "bulk" packages for those recipes that call for it that way:
One night I made Pasta Con Sarde, a spicy spaghetti with canned sardines in the sauce. I like sardines, and was trying to clean out the pantry, so this wasn't bad, although not really destined to become a favorite. On the side we had a sweet potato hash with corn, black beans, white sweet potatoes and avocado, topped with some homemade yogurt:
tonight I made beef and broccoli. Well, not really, it was venison and broccoli. Red rice on the side because I bought some at the Asian market last time I was there and because I was out of brown rice. I liked the red rice, it was kind of chewy and reminded me more of wild rice than of white rice. Of course, maybe I undercooked it, the instructions on the bag were in Chinese, LOL, and I found wildly vrying instructions on line, so I don't know how it's really supposed to be. Anyway, it was good, along with a "salad" of grapefruit sections, orange sections, avocado and walnuts, with a light dressing of grapefruit juice, balsamic vinegar, a little olive oil and a drizzle of honey. Another of my own inventions to use up pantry items, but it was good. (grin)
So, I've been eating, I just haven't had time to tell anyone! Annie |

| Thank you Ruthanna! Alexa, that quiche sounds divine. Sue, I've had bean soup on the brain with the cold weather but can't quite summon the courage. Beans and I are not friends, though I find them very tasty. Tonight I also made spaghetti squash - seasoned with herbs, butter and Parmesan. I roasted an organic chicken stuffed with an onion and celery and rosemary and rubbed with herbs and a hint of sea salt. I steamed some fresh kale. I have had bad kale experiences in the past but tried it anew. This was young tender kale and was tasty. Kale of the past has been strongly flavored and tough. |

| Between Nancy's lobster tails and Alexa's crab quiche, I see some shellfish in my near future. Annie, that is some fine looking sausage! Dcarch, what a beautiful and healthy chicken dinner you made. I've started back to work for my seasonal job at a tax office so last night we just heated up some meatball stew I'd made on Sunday.

I will have to give it a try. Annie - those sausages look AMAZING! And DC, latkes out of Spaghetti Squash sound intriguing... another I will have to try. Alexa, That's what I would call "perfect Pan Roasted Chicken Thighs" OK, Spaghetti Squash latkes/pancake. Many recipes you can find on the WEB. But here is my secret. Alexa, your coucous looks so tempting, especially with that golden chicken. Ann, your food photos always are awesome. DH went to an auction yesterday and brought home a vegetarian friend right before dinnertime. We ended up with black beans and brown rice topped with sauteed chard topped with canned onion rings I discovered during a pantry cleanout last weekend. Not very pretty but it was WFD. For teatime, we had cornmeal-cherry cookies.

Roast chicken was on the menu here last night.
And I made my version of a German Bread Dumpling (Serviettenknodel) as a side, along with mashed potatoes and gravy and golden cauliflower.

| Ohhhh, goodness!!! I do love looking at all the food art...I mean pictures! No, I mean food art!!! We had tilapia with haricot vert over fried rice tonight. Hubs insisted on a bit of parmesan on the vegetable.
The appetizer was from a little local restaurant--fresh shrimp spring rolls and a peanut dipping sauce.

| I might get a warning for this, LOL... I wanted to make something Chinese yesterday but had limited time. Then I came across a recipe for orange chicken that sounded fairly awful. One of those useless "sneaky chef" type recipes. I kept looking but kept coming back to this one out of disgust and curiosity alike. The chunked chicken gets coated with raw whole grain instant cream of wheat before it gets fried, and the sauce includes a half cup of baby food: carrot puree. I stuck to the recipe except I used fresh ginger and garlic. Guess what - it was actually pretty good! And yes, my picky son liked it, too. (Picky daughter wouldn't try it, but that's nothing new.) |

| Linda - I'm glad the South Beach diet is working for you - I have friends who swear by it. No pictures of last nights dinner, but I finally pulled the organic buffalo out of the freezer and decided on sliders. The kids LOVED them! They were juicy and had a great flavor and I will definitely be making them again. I also made sweet potato oven fries and a spinach salad. Alexa |

Linda, your diet meals all look so appetizing. Alexa, you have really mastered the art of making risotto. Nothing too exciting here except lots of celery dishes. Last night we had a sort of langostino scampi. We also had steamed spinach as a side dish.

| Everything looks delicious. I don't even care for white pasta, but I'd sure take ruthanna's langostinos! I've been trying to clean out the pantry, ever since I found that jar of pickles with an expiration date of 2004. Yeah..... So, last night elery and I had a crock-pot meal of something called Moroccan Beef. I was very skeptical, but it used several cans of things in the pnatry, including a can of coconut milk, one of crushed pineapple, a pint of sewed tomatoes and some sweet potatoes that needed to be used. It also called for carrots, onions, radishes (yeah, cooked they taste like turnips to me) corn and jalapeno peppers. Oh, and beef from the freezer, it called for chuck roasst, seasoned with cumin and garlic but I used a round steak because it was on top and I was lazy and Ashley was bringing Madison over so I could babysit... Anyway, it was amazingly good, I'd definitely make it again, but I'd leave out the carrots and replace them with something else, maybe rutabaga or white potato. I made cornbread on the side and it was a quick meal after working all day. Elery doesn't even like beef and he had seconds. Annie |

| I agree with Annie, everything does look delicious. Sooz, beautiful salad rolls. Sue, chicken with rosemary and lemon. My favourite. Nancy, I copied your recipe on the other thread. Can't wait to try your pasties. Linda, three beautiful meals. Moe would love to eat at your house. He would kill for a salad with every meal. Annie, steamed or cooked radishes taste similar to turnips to me too. That is the only way I really enjoy radishes. Ruthanna, thanks to you I might have to pick up some prawns this week and make a pasta dish. Yours looks delicious. Alexa, your risotto looks perfect. Did you go all vegetarian or did you use chicken broth for the liquid? I'd have to cheat and use the chicken broth. Some of our meals this week.
We had a ham dinner and have been eating leftover ham since.
Ham and eggs for Moe. Toasted Ham Sandwich for me.

| Ruthanna. your pasta looks very good to me, I'd love it. Ann, extra ham is a good thing and I'll have a raspberry scone anytime. Last night we had Filet Mignon with morel mushrooms in a wine sauce, stuffed jumbo shrimp, broccoli and a tossed salad. We ate our salads before I remembered to take a picture.

| Linda, the morels were dried. I try to dry some every year to enjoy during the winter. Not always lucky enough to get them though. Anyone been cooking this week? I have not been overly ambitious but did manage meatloaf one night and tonight I made a whole boneless chicken with stuffing.

| A recipe in the most recent issue of Bon Appetit magazine caught my eye... this is the Bacon Infused carolia Fish Muddle from the Feb 2012 issue. I did make some a substitution since the Bass didn't look very good at the market and the Bay Scallops looked great, well there you go!

On my way home from work Sunday I picked up three live Dungeness Crabs and made Roasted Garlic and Black Pepper Crab. We "pigged out" on crab. No sides to interfere with our feast. Monday night we had Pot Roast and last night take out Halibut Fish and Chips. Thinking of roasting a chicken for tonight's dinner. |

Thank you for the support, thankfully my younger sister is taking care of Dad and Mom daily. Here's the recipe for the spagetti squash dish Italian-Sy]tyle Spaghetti Squash 2 lbs spaghetti squash, halved lengthwise and seeded 2 Tbps olive oil 1 medium red onion, thinly sliced 1 zucchini (8 oz) cut into 1/2 " dice 4 medium tomatoes diced 1/4 tsp salt 1/4 tsp coarsely ground pepper 1/2 cup grated Parmesan cheese 1 small lemon, sliced Place the squash halves, cut sides down, in a glass baking dish. Add 1/4 cup water and cover with plastic wrap. Microwave on high for 8-10 minutes until tender;cool slightly In a large skillet, heat 1 tbsp of oil. Add the onion and cook over med-high heat for 3 mins. until the onion is translucent. Add the zucchini and cook for 4-5 mins until the zucchini begins to brown. Add the tomotoes, salt and pepper. Reduct the heat; simmer gently for 10 mins. Using a fork, scrape the squash strands into a bowl. Toss with the remaining tbls of oil. Mound the squash in the center of 4 plates or bowls and spoon the vegetable mixture over the squash. Drizzle with more oil, if desired, and garnish with the Parmesan cheese. Add the lemon slices. LOL Same South Beach Cook Book Easy Chicken in Wine Sauce 4 Tbsp extra-virgin olive oil 1 clove garlic, crushed 3 boneless, skinless chicken breast halves, cut in to strips 1/8 tsp salt 1/4 tsp coarsely ground black pepper 1/2 cup dry white wine 3 medium tomatoes, sliced In a medium skillet, heat the oil and garlic over med heat. Sprinkly the chicken with salt and pepper, then add to the skillet and cook for 7-10 mins. Add the white wine and cook for an additional 2 mins. Remove the chicken to a platter. Saute' the tomatoes in the skillet until tender. Place the tomatoes over the chicken and cover with the pan drippings. |

I have been looking at Katie C's Sticky Chicken recipe for years and years and years, wish I had the date saved on the recipe, would be interesting! Well it finally happened yesterday. It was just delicious and the gravy was awesome. I could drink it. Never cooked a chicken at 250 for 5 hours before but boy, it sure worked out great and its a keeper. Thank you Katie! |

| woodie, great minds think alike, don't they? (grin) OK, I actually have a few pictures. Last week Elery made some pasta with vodka sauce and our homemade Italian sausage. It was OK, but I had heartburn until the next day!
In retaliation, I made some pasties. Just beef, potatoes, rutabaga, onions, salt and pepper, in crust. No catsup, no chili sauce, no gravy, I just like to eat mine out of hand, like a sandwich:
I've also been working on getting my chocolate chip cookie recipe to "work" again, I finally got it right with these, barely crisp on the edges and chewy in the middle. I used all butter and a brown sugar ratio of 1 3/4 cup dark brown to 1/4 cup of white. Upped the flour and chilled the dough overnight. Finally, they were right again. Of course, they are all gone...

| Annie, sorry about the heartburn...no fun. I've been having a few go rounds with it myself. Nothing ever used to bother me. I could eat a few of those cookies though. We had a great dinner on Saturday.Started with the Bacon Cream Cheese Rollup's. AnnT posted the recipe recently.
Then we had a nice salad...forgot to take a picture of that. The main course was Whitefish Roulade's, I posted that recipe on the Wine Cookalong thread. Ready for the oven...

| Oh those bacon roll-ups look wonderful and if I liked fresh water fish I would definitely enjoy the roll-ups. I wonder, would it be good with flounder or cod? Since it is valentines, I decided to make a little effort and this was such an easy meal to pull together after work... Steak Au Poivre and Baked Scampi with Cajun String Beans and Garlic Mashed. I decided to use fat free Greek Yogurt instead of sour cream in the potatoes, and thogh it was tasty, it lacked the luxurious nouthfeel of real fatty creamy potatoes. That's okay, we made up for it with Flourless Chocolate Torte, Raspberry Sauce, Raspberry Whipped Cream and freah raspberries for dessert! LOL! Alexa

Well all the food is yummy as always. Everyone takes such lovely pics. Lunch to day was a spin of Salad Nicoise, I used chicken instead of tuna and didn't have any kalamata olives so used black one. Just a olive oil/lemon juice and dijon mustard as a dressing

| Today is DH birthday, so he chose the menu.... Haddock Puttanesca with Roasted Potatoes (red, yukon and purple) that he saw in this months Bon Appetit magazine. Ceasar salad on the side and pecan pie for dessert. Happy guy!

| omg...by the time I read to the bottom of the thread all the pictures were loaded. High speed...whoo hoo! Don't care if they did move my TGIF...being able to load food porn is noteworthy, lol. Spatchcocked chicken rubbed with herbs and roasted over a bed of last year's garden vegies that we need to use up...fingerling potatoes, leeks (I am amazed at how well they kept while lost in the back of the fridge), carrots, garlic, and a fennel bulb I picked up at Trader Joe's (never cooked fennel...it's goooood. I bought seeds. MAYbe I can grow it). Made a pan sauce out of the drippings and served with a green salad and dressing made w/ dcarch's black garlic butter. NOT food porn, but hey...at least I can upload pictures, hehe....

I tried a new recipe today......cabbage and leeks cooked in the slow cooker, then a white sauce stirred into it. It was good! Made a well-done roast beef (hubby's favourite way to eat beef), carrots and onions around the roast, mashed potatoes and gravy.

| Made my all-time, hands-down favourite meal tonite. Chicken Marabella. It's so good! Roasted asparagus and steamed rice alongside. I couldn't wait to dig in, so I didn't even wait to throw it on a plate before taking the pic. That's not grease, in the chicken! It's the marinade.

| Woodie, thanks...that sticky chicken recipe has been around a long time. I've tried it with different herb/spice mixtures, and it's never as good as the original. We just had sticky chicken and green chili chowder with leftover meat and broth I had in the freezer. I've been POOFing and POOPing this week, things are trying to sprout in the pantry. I went to work "for a couple of hours" and wound up missing lunch, so hefty dinner was in order. POOFed some kabocha squash and pork chops, which were braised in some wine. Sauteed some Fuji apples and onions in butter with a bit of white balsamic and white pepper, and quinoa "risotto" with garlic and dried kale, topped with a bit of dcarch's black garlic (yum). Salad on the side. Me and my winky little Lumix hate to follow Ann_T, lol.

Everything looks so good, it's hard to believe I had to find this on page two, the forum is moving right along lately. I had fish too, not sushi, but cod. Once with sauteed greens and brussels sprouts:

One night we had breakfast for supper, I made asiago cheese popovers, Elery had never had popovers. We also had bacon, eggs and fresh Texas grapefruit. The grapefruit is so good right now, it doesn't even need sugar, it's so sweet.
I was sure glad the popovers popped up and didn't deflate, even though when I read the recipe it said I could NOT use butter to grease the pans, that butter didn't work. Sure enough, I used butter before I read that part and remembered, but they turned out fine anyway.
So, you see, I have been eating, although tonight's supper was hot tea because I got bronchitis. Ugh. Annie |

| Those are some great pics, Annie! My dinner was sauteed veggies. I like to have a big meal early on and end the day with something light. My kids had a failed meal of mine- well, not a total failure, but certainly not blogworthy. I am lucky to have kids that will eat just about anything. |

Bought some awesome, plump bone-in, skin on breasts today. Rubbed some oil and my seasoning blend on the skin and baked in the oven. I roasted some carrots, onions, green pepper and asparagus. Chopped and mixed with cooked orzo. Apple cobbler in the oven now, for dessert

| Wow, I've been so behind on the wfd. Even had to drag the post from the middle of 4th page! I could comment on about every post but, better not since it's one thirty and bed is calling me early since I'm not feeling well. Nancy, Lobster Thermidor is one of my all time favorite dishes. Christy doesn't like lobster or crab so I rarely make it. I do have a tail in the freezer that I was going to make for myself for Valentines, but we both had filet instead. Yours looks wonderful. Jasdip, your Marabella really is calling to me. I've been working with Christy on olives, so, maybe if I try that..heh. Your roasted chicken breast looks good too. We both like orzo. Ann, you have so many good dishes on here. I'm with Moe in loving a salad for dinner and that one had so many great things on it. Your t-bone however would have my carnivore licking the screen and must admit I'd enjoy it too. Especially with your potatoes and those mushrooms. I could eat spinach most every day. Katie, we've been doing a lot of poofing lately. I had 50# of meat for the dog to fit in. LOL. I can almost smell that black garlic in the rice. Yum. Your spatchcocked chicken looks great too. Annie, of course Cooper loves Madison. Who could resist that young beauty? You'd think we'd have more good fish stores around here, being only 40 miles from the ocean but I have a hard time finding good cod. Omg, Annie, those wine glasses are too funny. Love it! Ya got me at the popovers though. Love the red grapefruit. Realllly want a popover with that dippy egg! Ok, here are the things I've taken pics of most recently. I never got around to posting Christy's Birthday dinner request. Shrimp PoBoy. She had the PoBoy and I had my shrimp as a remoulade[salad].
This pork roast was done with the low heat method. It was done perfectly inside. I didn't bother to brown the outside since neither of us would eat it and I was hurting from too much cooking already and wanted to eat!! LOL
Here's what else I made that day. Lemon Meringue Pie. Christy's family recipe.
Another weekend I made scalloped potato and ham in the big vision ware casserole. I love it with lots of white sauce, as is evident. I put most of the ham down on one end for Christy and stuck a little piece on top to show which end. Smiles.
Done baking, with some colby melted on top at the end.
Of course you know I've been making soup too. Made about 3 gallons of veggie soup for the freezer. Then I had somehow stockpiled the navy beans so I used one of my giant pots and cooked 8 lbs of navy bean soup. I have so been enjoying that soup. All the soup making is why we've had to do some poofing to make room for Jessie's food. LOL. Nice napkin it's sitting on, eh?

| I'm starting to get the hang of this low fat, low sodium diet. I actually make some pretty good dinners now and then. Tonight was chicken, mashed purple potatoes with roasted garlic and kale (from my neighbor).
There was an article recently about purple potatoes lowering blood pressure without weight gain. I have had them as part of a fingerling mixture, but Wegman's started carrying bigger ones this month, so I buy them every week now. They taste just about the same, just takes some getting used to. Sure makes dinner more colorful. |
