Sweet Potato Fries

As many of you may know, I do not like sweet potatoes.

However....someone told me that if I had them as fries, they are totally different and so good compared to the sticky sweet mashed with marshmallow crap I have been subjected to at past holiday dinner tables.

So....I bought two sweet potatoes. Now what do I do? Do you julienne them and fry 'em up like french fries? Do you wedge them and bake?

I am willing to give them a fair shake if someone can tell me what to do with the darn things!

You can fry them but the sugar in them will caramelize when the oil gets to that temperature. I would wedge cut them, sprinkle them with a small amount of chipolte chili powder and bake them. You will have a bit of heat with the sweet that way.

Linda, I just made some last week. I do not fry (don't want the fat). I julienne them, spray with a little olive oil and salt and pepper, and then bake them at 400 degree for about 40 minutes. I LOVE them. Sometimes I add a little cumin to them also. A completely different taste that way.

I've never made frozen ones, but this works for fresh so will probably work for frozen too. Preheat the oven to 425ÃÂ°. Line a large rimmed baking sheet with parchment paper or aluminum foil and then set aside. In a shallow bowl, stir together the flour, salt, and pepper. In a separate shallow bowl, lightly beat the egg whites with 2 tablespoons of water until combined. Place the Parmesan on a sheet of waxed paper or put it in another shallow bowl. Dip the sweet potato first in the flour mixture, shaking off excess. Then dip each wedge into the egg white mixture until coated. Finally, dip the sweet potato in the Parmesan, pressing the exposed surface of the potato into the cheese. (Don't worry if some gets on the skin.) Transfer potato wedges onto the prepared baking sheet as you go. Bake potatoes until tender and crisp, about 25 minutes. Serve sprinkled with more salt if desired.

Dariana -- the following recipe that a GW poster named jadite posted years ago would work well in your situation, since it reheats well. Fiery Sweet Potatoes Time: About 2 hours 5 pounds sweet potatoes 1 cup coconut milk 1 tablespoon Thai red curry paste 1/2 cup dark brown sugar 4 tablespoons unsalted butter 1 teaspoon salt. 1. Heat oven to 375 degrees. Bake potatoes on a baking sheet until very soft, about 1 hour. When cool enough to handle, peel and mash. 2. In a small saucepan, heat coconut milk with curry paste over low heat. Mix coconut milk mixture, half the sugar, half the butter, and salt into potatoes. Keep warm until ready to serve, or cover and refrigerate up to two days. 3. At least 30 minutes before serving, heat oven to 425 degrees. Put potatoes in a baking dish, cover with foil and bake for 20 minutes. Uncover potatoes, dot with remaining butter and sugar and broil until brown and crusty on top, checking often to prevent scorching. Yield: 10 to 12 servings. Notes: I've made this, the full 5lbs, following the recipe up through step 2. I've frozen it in portions at this stage. If I'm serving it to guests, I'll finish it with the butter and brown sugar because it makes a prettier presentation. If it's just for DH and me, I skip this. Many years ago, I used to bake mine, and sprinkle with cinnamon sugar when serving. Always cut them into wedges.

Baja burger here is known for their shoestring sweet potato fries with some yummy fried okra thrown in as their added surprise! BIG HIT here!

I also wedge them and bake/roast with chili and garlic powder...
But ,while I have never done it...I sure have eaten and loved sweet potato chips! Skinny slices of sweet potatoes, fried, drained on paper towel and sprinkled with salt and cayenne!

Sweet Potato Wedges with Dipping Sauce- lorijean

2 lb. 4 oz. sweet potatoes, unpeeled, cut into 3-4" wedges - Toss with 2 tablespoons vegetable oil. Sprinkle with chili powder & salt to taste.
Place on baking sheet in single layer. Bake at 375 F., 40 - 50 minutes, until tender and lightly browned on edges.
Dipping Sauce
Mix 1-1/4 cups sour cream, 2 tablespoons sweet chili sauce, 2 green onions (finely chopped), and 1 tablespoon chopped fresh cilantro. Season to taste with salt & pepper. Cover & refrigerate.
Serve hot wedges with dipping sauce.

Linda, I've never been a big fan of sweet potatoes either. But I really liked these fries.

1/2 cup all-purpose flour

Okay, I can't stand sweet potatoes and I adore french fries!! I recently discovered Alexia julienned Sweet Potato fries in the freezer section. You put them on a cookie sheet and bake them, they are fantastic!!! Recently they switched the type of potato that they used, and they were awful. But they have since switched back. I highly recommend them, they are REALLY good!!! Christy :)

I think sheshebop is right. Make julienne strips, sprinkle with olive oil & maybe some cayenne pepper if you want some heat (optional) and bake in 400 degree oven for 40 minutes.

Sometimes when I'm in the mood for oven fries, I'll cut up wedges of regular (white) potatoes and sweet potatoes, some shallots and garlic cloves, fry them briefly in a little olive oil in an oven proof skillet or casserole (depending on how many I'm making), and then bake them in a 400 degree oven for about a half hour, depending on the size of the wedges. Check every 10 minutes, and stir the contents up, and remove the garlic and/or shallots if they cook before the potatoes. The combination of potatoes, etc. is very tasty. You need very, very little oil for this dish.

Well, I ended up using Cindy's recipe/method for oven fries (which we love), and adding a sprinkle of chipotle as suggested by daylilydazed, above.

Nope. Still don't like sweet potatoes. I think I'll give up on trying to like them. Sometimes you just can't make yourself like something.

Thanks for all the ideas, but I'm stickin' to white potatoes.

We run them through a mandoline slicer (or hand cut is fine) to make "chips" out of them. We will do a few regular spuds too. Parmesan cheese, olive oil, and Italian dressing coat them. (Or olive oil and salt and spices of your choice) Put them on cookie sheets in a 400 degree oven for around 45 minutes. Delicious!

Like Linda, I have never cared for sweet potatoes, and not for lack of trying. I made Ann's recipe tonight and loved them! I have to cut them thinner than wedges to appeal to my tastebuds, but I've always wanted to like sweet potatoes so I feel like I've accomplished quite a goal. :) (LOL I know, get a life already) Thanks Ann!

I have several for dinner tomorrow (thank you, DH, for all the 'warning') and wanted to prep my sweet potatoes today- can anyone recommend a foolproof way to hold them in the refrigerator overnight? Ann?

Would I hold them in cold salted water, like regular potatoes?

Here's the recipe I'm using- from Gourmet, May 2004- it's a favorite, and it's a beautiful dish.

Lime Cilantro Sweet Potatoes
serves 4

2 lb sweet potatoes, peeled and cut into 3/4" pieces
3 T. EVOO
3/4 t. salt
1/4 t. cayenne
1/2 t. finely grated fresh lime zest
1 T. fresh lime juice
1/4 c. chopped fresh cilantro

Put oven rack in lower third of oven and preheat to 425.
Toss sweet potatoes with 2 T. oil and 1/4 t. salt in a shallow baking pan. Arrange potatoes in 1 layer and roast, stirring halfway through roasting, until tender- about 25 min. total. Stir together cayenne, zest, and remining salt in sm. bowl. Whisk together lime juice and remaining T. oil in a med. bowl then add potatoes. Sprinkle with cayenne mixture and cilantro, stirring gently to combine.

I love sweet potatoes! but sweet potato fries are my ABSOLUTE FAVORITE! I prefer them over regular french fries. something about that sweet and salty flavor. I also like to cube the sweet potatoes give them a quick nuke to speed the process then throw them under the broiler or on the grill with kosher salt and fresh ground pepper until they are crispy. Delicious!!

I'm with you, Linda. I just can't do sweet potato fries. I like my sweet potatoes sweet, not salty. I've got some sweet potato puree in the freezer that I can't decide what to do with-either pie or a sweet potato souffle.

I agree it is a great snack. In India we used to do this very often at home. Also we get in different shapes in the stores.

Here's another delicious version of these baked fries....before and after baking.
In these photos I was using white potatoes, but they're even better when using yellow yams:

EASY PARMESAN POTATO WEDGES
***********************************
This recipe can also be served with sour cream.

1/3 cup grated parmesan cheese
1 teasp paprika
1 teasp garlic powder
1/2 teasp salt
1/4 - 1/2 teasp pepper
4 potatoes unpeeled
1/3 cup vegetable oil

1) Preheat oven to 400F (204C)

2) Combine first 5 ingredients in a plastic bag.

3) Cut each unpeeled potato into 8 wedges. Dip wedges in oil and then shake in cheese mixture.

4) Place wedges on a baking sheet skin side down and bake at 400F (204C) for 30 - 40 minutes.)
