Comments (34)Like Ann T and Seagrass, you can have all my fruit. I'll eat them, I don't hate them, but I don't really care about them. I'll eat fresh sweet cherries every year while I can pick them locally but the ones that are shipped from other places aren't worth eating. I like apples, will eat a handful of grapes or melon, an occasional orange, I detest bananas. Raisins, dried cherries or cranberries are acceptable in muffins. I don't care for raw broccoli, except in that salad that Deanna posted, and I make it with half broccoli and half cauliflower. Other than that, I love vegetables, all vegetables. I don't eat tomatoes unless I can get them fresh and locally, but they're really a fruit anyway. Other than that I'll eat vegetables any time. Frozen, canned, fresh, dried, reconstituted, in soup, roasted, raw, whatever. I will say, however, that I want them either cooked or raw, none of that half cooked nonsense and I'm not a huge fan of the green salad. Give me a big plate full of collard greens, though, maybe with caramelized onions and some smoked pork hocks or a ham bone and I'm happy. Add some cornbread and put some whole kernel corn and chopped green chilies into the cornbread and I'm extra happy! My favorite supper is to take parsnips, sweet potaotes, beets, onions and nearly anything else I can find, cut them up, drizzle with olive oil, salt and pepper and roast 'em. A big roasting pan full will last me for a week's worth of lunches! I sneak vegetables into gnocchi and soup, into omelettes and sandwiches, into bread and pot pies and stew. Comments (17)I'm late to the party but this is one recipe that I've had many times. The list of ingredients is long but OMG it's just *the* best spinache/artichoke dip I've ever had. California Pizza Kitchen's Spinach/Artichoke Dip 1/4 cup olive oil 2 tablespoons unsalted butter 3/4 cup diced white or yellow onion, cut into 1/8-inch dice 1 1/2 tablespoon minced garlic 1/2 cup all-purpose flour 1 1/2 cup chicken stock (preferable homemade) 1 1/2 cup heavy cream 3/4 cup freshly grated Parmesan cheese 2 tablespoons dehydrated chicken stock base or crumbled bouillon cubes 1 1/2 tablespoon freshly squeezed lemon juice 1 teaspoon sugar 3/4 cup sour cream 12 ounces frozen spinach, defrosted, drained, wrung out by hand, and coarsely chopped 6 ounces canned artichoke bottoms, drained and cut into 1/8-inch slices 1 cup finely shredded Monterey Jack cheese 3/4 teaspoon Tabasco Sauce Blue and white corn tortilla chips Directions: In a large saucepan, warm the olive oil and butter together over medium heat. When the butter has melted, add the onion and cook, stirring occasionally, until wilted, 3 to 4 minutes. Stir in the garlic and cook 2 to 3 minutes longer, stirring frequently and stopping before the onion and garlic brown. Sprinkle the flour and continue cooking, stirring continuously, until the mixture turns a golden-blond color, 10 to 15 minutes. Then, whisking continuously, slowly pour in the stock until it is smoothly incorporated. When the mixture begins to simmer, stir in the cream. Let it return to the simmer. Remove from the heat, add the Parmesan, chicken base or bouillon cubes, lemon juice, and sugar, and stir until thoroughly blended. Add the sour cream, spinach, artichoke bottoms, Monterey Jack cheese and Tabasco sauce, and stir until the ingredients are thoroughly combined and the cheese has melted. Add 4 cups granulated sugar, one 14-1/2-ounce can (1-2/3 cups), evaporated milk, and 1 cup butter. Cook over medium heat to soft ball stage (236ú); stirring frequently. Remove from heat; add one 12-ounce package (2 cups) semisweet chocolate pieces, 1 pint marshmallow creme, 1 teaspoon vanilla, and 1 cup broken walnuts. Beat till chocolate melts, Pour into buttered 13x9x2-inch pan. Score while warm, cut when cool and firm. BLUE RIBBON FUDGE Butter sides of heavy 2-quart saucepan. In it combine 2 cups granulated sugar, one 6-ounce can evaporated milk, two l-ounce squares unsweetened chocolate, dash salt, and 1 teaspoon light corn syrup. Cook and stir over medium heat till chocolate melts and sugar dissolves. Cook to soft ball stage (236ú), Immediately remove from heat, Add 2 tablespoons butter without stirring. Cool to lukewarm (110ú). Add 1 teaspoon vanilla and beat vigorously till fudge stiffens and loses its gloss. Quickly stir in 1/2 cup chopped walnuts, Push from pan, (don't scrape sides) into buttered shallow pan. Score while warm; cut when firm. OPERA FUDGE Butter sides of a heavy 2-quart saucepan. In it combine 2 cups granulated sugar, 1/2 cup milk, 1/2 cup light cream, 1 tablespoon light corn syrup, and 1/2 teaspoon salt. Cook over medium heat, stirring constantly, till sugar dissolves and mixture boils, Cook to soft ball stage (238ú). Immediately remove from heat; cool to lukewarm ,(110ú) without stirring. Add 1 tablespoon butter and 1 teaspoon vanilla, Beat vigorously till fudge stiffens and loses its gloss. Quickly stir in 1/4 cup chopped candied cherries, Spread in buttered 9x5x3-inch pan. Who are these people in power conspiring to keep people ill? -- "You don't think it's odd that all this money has been raised to find all these cures but none have been found?" That's how science works. If people knew where to look, knowledge would be much easier to obtain. You may not appreciate that the fact that nothing is found with a particular investigation doesn't mean nothing will be found, simply that where or how they were investigating wasn't fruitful. Work goes on. -- "Going to doctors but staying sick?" Doctors are in on the conspiracy with people in power too, they want to keep their patients ill intentionally? Yeah? -- "Medicine is all trial and error" Yes, this is true, it's true of much of scientific research in general too. Can you suggest a better approach? Smarter people than you and me and the world of science in general have settled on an approach to expand knowledge. If something is proven to be effective, the researchers rush to publish papers and everyone knows about it pronto. Ever hear of PubMed? It's an NIH-run online catalog of ALL biomedical research that's published. Should a piece be missed in a periodical, researchers doing catalog references will come upon any findings that are new or different concerning an area of interest they have. There are no secrets. In fact, researchers rush to find areas others haven't investigated because being first is a way to become better known. In the alternative medicine area, it's mostly crickets. Religions are a belief based environment, science is not. Wishing doesn't make it so. -- "Drug companies can't patent natural things. " Sure they can. -- In the absence of proof, a suggestion or a hypothesis is described as lacking proof or being unsupported by evidence. That means it's false/invalid/doesn't exist.
