If the filets are thin, I treat the same way as flounder. It's tender and white. Dust with flour and saute in butter with some garlic for 2-3 minutes on a side. That's if it is really thin. It it is thicker, look at trout recipes and adjust those.
If you have a thicker cut I like to do them Cayman Island style. I wet the fish and dreg it in seasoned flour, fry it quickly in hot oil both sides in skillet, make a sauce of diced tomatoes, diced onions, and peppers. I also add a hot pepper minced or you could leave it whole while cooks and take it out at the end. Cook sauce for about 10 minutes till sauce starts to thicken add fish and cook another 10 minuets. Serve with rice and beans
Place in baking dish and season with salt, peppar, and garlic powder and squeeze some lemon juice on them.
Chop a small onion (I've used white, yellow, and red doesn't matter to me) in small pieces and mix it with enough mayo to spread on top of the fish in a 1/4" thick layer
Spread it on the fish and bake for 20-25 min (or until fish flakes easily). Mine based on the thickness and width I have access too takes about 20 min, but some larger pieces may take longer.
