Now that we've mastered fried chicken, milk gravy?

Please tell me the best way to make the milk gravy that goes with fried chicken. I never, ever, order it, and I do not know how it is supposed to taste. I tried Pioneer Woman's recipe, but D H said it was lacking something, and it was over chicken fried cube steak, and ended up not white, but pale brown. How does it stay white if you are supposed to cook the flour till golden in the pan drippings? Pointers? Help? Recipes? All I could taste was pepper. References? The stuff at restaurants just looks like paste to me.
