Toffee that won't break my teeth

I am still looking for that perfect English Toffee recipe that won't break my teeth.

The last recipe I tried was so hard I felt like I was eating peanut brittle. The ingredients were 1 c butter and sugar, vanilla, water. Another recipe called for brown sugar, baking soda, vanilla, water, butter and that texture was a bit better.

I bring it to a boil and then let boil gently without stirring until 285 degrees. Quickly pour onto foil.

How do you make soft toffee?
