The lady that cleans my house taught me how to make stuffed mushrooms that are absolutely Fantastic!

From what I can remember right now:

Strawberry crumb cake -- good, but also not worth the calories, would rather have the hot milk cake with sliced strawberries

Here ya go.

I make my own cake release & it's been working just fine for my baking needs. Not only for cakes, also use to grease any type of baking sheets/pans.

Bakers Release
2 cups Crisco
1 1/4 cup flour

Mix together well, store in a covered airtight container. I keep it in my cabinet w/the other baking items. I like this mix as it hasn't left that gummy residue that the sprays leave behind on my pans.

Hard to remember all, but these three stand out. I really don't step out of my cooking comfort zone often as the food critic is not as adventurous as I.

Sounds like Lucy made her own "Baker's Joy". The spray with the oil and flour. I haven't tried this product because I don't think it is sold in Canada.

All I can say is that I managed to gain a few extra pounds...LOL...loved every bite for sure!!

Hi Michelle --

The hot milk cake is super easy -- from the Better Homes and Gardens cookbook...

1 cup all-purpose flour
1 tsp baking powder
2 eggs
1 cup sugar
1/2 cup milk
2 Tbs butter
1 tsp vanilla and 1/4 tsp almond extract (my addition)

Preheat oven to 350. Grease a 9 x 9 inch square baking pan (I used a 9 inch round cake pan but it fills it almost to overflowing).

In a saucepan, heat milk and butter until butter melts.

Mix flour and baking powder in small bowl. In large mixing bowl, beat eggs on high about 4 minutes or until thick. Gradually add sugar, beat another 4-5 minutes until light and fluffy. Add extracts and flour mixture, and mix until just combined. Add hot milk to batter, mix until just combined. Pour into greased pan, bake for 20 to 25 minutes or until a toothpick comes out clean. Cool on a rack and serve (preferably smothered with berries and whipped cream!)

Michelle, here's another recipe, very similar but makes twice as much. (grin) It's from pixiestix and it's good. Should be, I think she's the member who has been to the Pillsbury bake-off like, three times?

The frosting came, I think, from Cindy's daughter. I know sheshebop didn't like the frosting, it was too grainy, but I just love the stuff, it reminds me of caramel fudge.

Hot Milk Cake - Pixistix
Old fashioned, simple, melts in your mouth!
4 eggs
2 cups sugar
2 1/4 cups flour
2 1/4 tsp. baking powder
1 tsp. vanilla
1 1/4 cups milk
1/2 cup (1 stick) butter
Beat eggs and sugar well. Combine flour with bk. powder and add to egg mixture along with vanilla. Heat milk and butter together until butter melts; gradually add to batter, beating until well blended.
Pour batter into a greased 9x13 pan. Bake at 350 for 30 to 35 minutes.

Brown Sugar Topping
1 cup packed light brown sugar
1/4 cup whipping cream
1 T unsalted butter
3/4 tsp vanilla
1/2 cup chopped pecans
Combine the brown sugar, whipping cream & butter in a saucepan. Bring to a boil, whisking constantly until smooth. Remove from heat. Stir in the vanilla.
Let stand 10 minutes. Whisk until of spreading consistency. Stir in the pecans. Spread over the brownies or cake. Let stand 1 hour or until set. Serve cold or at room temperature. Makes enough for an 8x8 pan.

Regarding "Bakers Release", it is used when you need to grease & flour any type of baking pan/sheet. The added benefit is, it's an all in one step and the other benefit, is it doesn't leave behind a gummy mess on your bakeware.

Quick Minestrone using canned spaghetti sauce from Giada DeLaurentis
Homeade Boursin from Chase. This is a CF tried and true but I had not made it before. I had it for my "Dog Days of Summer" Party. The other hits from that party were fresh blackberry shortbread (from MS Living magazine), and Potoato/Beet salad from Moosewood Restaurant Lowfat Favorites, and mint lemonade from mint from my garden, vodka from my fridge, and BLT salad with avocado which I made up myself.
I made morrocan chicken from a Cooks Illustrated recipe. It was OK, very rich. Tasted better upon reheating.
Ann T's roast duck which I did for Christmas.
Cherry Cranberry Cobbler from "Cooking Light" magazine
Spaghetti with tuna from "La Cucina Ebraica" by Joyce Goldstein
