Thanks for sharing soup recipes on this cold day! The Lady's Chicken soup and the stuffed pepper soup sound intriguing. Which was your favorite ?

Personally I'm not a big fan of any type of peppers so between those two, I would pick Ladys chicken. The stuffed pepper was good and I'm sure my family will enjoy it as they are "pepper" fans.

I wonder how Emeril's potato soup would be if substiuted in vegetarian broth?

I'll make anything vegetarian. That potato soup would be just fine made with vegetable broth, especially if you made your broth from scratch instead of using store bought (although, I've used store bought frequently, simply because it saves time.)

In my head I'm figuring out how to make the stuffed pepper soup vegetarian. I've made stuffed peppers using beans. That would be good. Different from the original recipe, but still good in its own way.

Thanks for posting the recipes. I couldn't read the Wedding Soup recipe.

Wedding soup

96 oz of broth
12 oz of acmi de pepe (sp?) pasta (those tiny ball pasta)
2 tsp minced garic
16 oz chopped spinach
1 tbsp chicken flavored base
1 tbsp beef flavored base
italian meatballs cut into quarters
salt and pepper to taste

The person who made this usually doesn't follow exact recipes.

Is base seasoning? She said something about using poultry seasoning.

I think "base" is something like bouillon granules, although there's a brand named "Better Than Bouillon".

I make the Stuffed Pepper soup and really like it! I garnish with Mozzarella.
