Substitute for an egg?

Was planning make cornbread to go with the bean soup I'm making for dinner. The recipe calls for an egg, but just saw I don't have any. With a snowstorm out, there's no way I'm going out for eggs. Is there any substitute? I have a container of egg whites in the fridge left over from a yolk-only recipe, but I don't know how to tell if they are still good. They smell fine. They were whipped but now are not.

Yogurt with oil? I thought I read that somewhere. Buttermilk?
