Found A New Favorite Recipe :)

Hi everyone,

I made this salad for New Year's Eve for when mum and I went to play Yahtzee with our one elderly neighbor lady that we walk with (she's in her late 60's). I still have some of it left, but it's become a new favorite of mine. I found it on cooks.com.

ORANGE SPARKLE SALAD

1 (3 oz.) pkg. orange Jello
1 c. boiling water
2 c. miniature marshmallows
1 pt. orange sherbet
1 c. orange sections (I use mandarin oranges)
Dissolve orange gelatin in boiling water. Add sherbet. Stir until almost firm. Fold in fruit and marshmallows. Fill dessert dishes. Chill until firm. Serves 6.

I didn't put it in dessert dishes to chill (just a covered plastic container), and it's sweet, but not overly sweet. I'm also sure that other fruits and flavors can be used. Our Wal-Mart didn't have any pints or larger sizes of orange sherbet, so we used orange sherbet pops (a box of 6 bars that are 3 ounces each). Oh, and for the mandarin oranges, I used one 11 oz. can, drained. It measured out to be one cup exactly.

*sighs* Wish they made strawberry sherbet so I could make it with strawberries. I don't think it would hurt to use orange or raspberry sherbet instead, would it?
