Planning a Wedding Menu... Would love input!

One of my best friends is getting married in early May at a friend's vineyard in Napa. Friends and family are all pitching in to make this a fun, low-cost, yet elegant picnic. (Probably 50 adults max. Wines from the vineyard. DS is brewing beer. I'm in charge of the menu. Here's what we discussed so far.

Appetizers and champagne before the ceremony:

asparagus wrapped in prosciutto w/ shaved parmesan

??

Supper after the ceremony:

baked rosemary chicken

baby red potato salad (non-mayo)

other non-lettuce-based salad (something that won't wilt easily)

melon and blueberries with vanilla and fresh mint

??

Late night snack:

sandwich plate

??

Open to lots of suggestions.

Preferably nothing too messy like bbq. Dishes that can be prepared ahead and served at room temperature are a definite plus.
