Stuffed Boned Chicken

This has been one of Moe's favourite meals for as long as we have been married. So almost 35 years. I've made a version of this dinner numerous times over the years. Just not recently.

It is the perfect way to prepare a roast chicken for a dinner party because a small chicken will easily feed six to eight when it is boned and stuffed.

I boned out the chicken earlier in the day and just refrigerated it until I was ready to stuff it.

Put a pan of cornbread in the oven early afternoon for the stuffing.

Bonus, a slice with afternoon tea.

Chicken stuffed and tied.

Roasted surrounded by sliced onions, garlic cloves and a handful of cherry tomatoes and a little chicken broth.

Sliced and ready to serve.

Served with roasted Delicata Squash, butter peas and mashed potatoes. The sauce is made by adding a little more chicken broth to the pan and pureeing the vegetables and then straining.

Beautiful...just beautiful....I would love this menu....cornbread stuffing is one of my and my families very favorites. As usual Ann_t you get an A+

I ended up going with a chicken piccata. It was okay. I think I had too many browned bits (maybe they were too browned) or maybe it was the the rind in the lemon - the sauce was rather on the bitter side, unfortunately. My husband also came home with a $12 pie that was disappointing also from a bakery in the "high end" part of the city. A bunch of fruit, fresh/dried, poorly combined, too much cornstarch and underbaked crust. I really wanted a good food night, sigh, there's always tomorrow.

When I was a kid, just out of the house, one of my "go to" meals for entertaining was Cornish Game Hens or Chicken, stuffed with Rice A Roni long grain & wild rice pilaf. Nowadays, I make my own pilaf, and it is still a good dish for when you want something that looks more impressive than it is difficult. I've never worried about the stuffing/juice thing John, and so far I haven't poisoned anybody. Of course I've always rinsed the bird both in and out, thoroughly. I think with fowl, it isn't often the bird itself that makes people ill, even if it is undercooked. Most often, food poisoning traced to poultry comes of people not following basic, healthy practices when dealing with it prior to cooking. You know, cutting it up on a board which is not properly cleaned before using it again for salad veggies or the like. Bacteria has to have time to multiply, and a medium conducive to growth. A bit of raw chicken juice on some cabbage, tossed in dressing and left to sit...urk. Now, if your chicken juices aren't quite hot enough, and get into the stuffing, and you let the leftovers sit on the counter while you have dessert and chat after dinner, and then you don't heat the leftovers thoroughly... :0

Elery has de-boned chickens and turkeys, more than once. Unlike dcarch, I have been cooking nearly all of my life and have never once found it essential to bone a bird, although it isn't really all that difficult. I figure if I raise them, slaughter them, clean and pluck them and then cook them, the people eating them ought to be able to get the meat off the bones. (grin) That said I do have the book "Essential Pepin" and the DVD included with techniques. I've watched the DVD and did not notice that there were any detailed instructions for de-boning a bird. I really enjoy watching Jacques Pepin, he does make everything look so.......possible. I'll never be able to de-bone a bird in 2 minutes, though, I'd have such a mess you'd never recognize the remains as poultry! Annie

I will discent from most of the above. One of my favs at Costco is the stuffed tilapia. It is a crabmeat and rice mix that I adore and wish they would just sell the stuffing. Our locate market, Butera, sells both stuffed chickens and pork roasts and they are very good also. I have gotten to know the butchers there and they only keep the birds for one day and are made each mornng. He will even make one up for you if you ask. Ask what is in the stuffing. If they use raw eggs, back away fast. If you trust the store and know the employees, I have no problem with it. They are smaller and cannot afford to spread samonella. Now a Safeway, I have my doubts. I even stay away from the rotisserie hens. Those never look fresh. If you do buy one, cook it the same day or freeze it.

Ann T, that looks absolutely delicious and I like the green peas with the yellow squash, very pretty.

whistle, you CAN cook something like this, really you can. It might not look as pretty right away, the first few times, but it'll still taste good and it'll get better and better. Just jump in and try it. If the chicken isn't pretty, it'll still be delicious and edible, even if you end up with chicken nuggets or pieces for dumplings!

Awwww, thanks, Annie. Thanks to this forum, I do try more than I used to. It's nice that DH will eat whatever is place in front of him.

Ann, I was looking at the pictures as my husband came in. He took one look and asked, "What is that? I want some!" He's not the only one who wants a slice. It looks absolutely delicious. Now will you tell me how you handled the wings. Did they get chopped off or did you actually bone them too?
