What is Toor Dal Kory?

Several months ago I bought a dried product called Toor Dal Kory. It looks like yellow split peas but slightly smaller than the ones I'm used to. I have a wonderful Indian style split pea soup that calls for yellow split peas, and I'd like to use the Toor Dal Kory, but I'm not positive what it is. Can anyone help?

Well, I blew somthing like this one before, but I'm pretty sure that what you're talking about is "dhal", which is a pea/bean. "Toor" is lentil. "Kory/kori", I think means "polished".

Googling Toor Dal Kory gives conflicting responses. The Toor Dal that I have looks like this.

I think that any split dal will cook fairly quickly and become smooth and will work for a soup. I have used this one for soups. You should be fine.

BTW, I just thought this recipe was OK, not great.

I'd love it if you would share your recipe and tell us how it comes out.

Amaranth is widely available in Indian grocery stores in my area (CA bay area). It is called "mulai keerai" or simply " keerai"The traditional way to cook it is to make kootu which kind of a wet curry that can be eaten with rice or flat breads like chapathi. Ingredients Spinach /amaranth Greens - 1 bunch Lentils toor dal or Mung Dal - 1 cup cooked till soft with enough water to get oatmeal like consistency For curry paste: Fresh /frozenGrated Coconut - 1 cup Dry Red Chilli -1- 3 nos (As per your taste) Urad dal - 2 tbsp Jeera/Cumin seeds - 1 tspn For Seasoning/Tempering Oil - 1 tspn Mustard - 1/4 tspn Urad Dal - 1/2 tspn Dry Red chilli - 1no Preparation Method Wash and chop spinach/amaranth into small pieces. Cook toor or mung dal soft with water. Cook spinach in a vessel with salt and turmeric. Make curry paste as follows: Roast the red chilli, the urad dal in 1/2 tsp of oil until urad is pale golden brown. Grind with Grated coconut, and cumin to a fine paste. Once spinach/ amaranth is well cooked(You will know by the bright green color) add grounded mixture and dal. Add salt as required. Mix well and until it boils. If its too thick add little water while boiling. Can also add 1/2 tspn of coconut oil. Now season with above ingredients in a hot pan and add to the Keerai Kootu. This is a good sidedish for Chapathis or also with plain rice.

Two other couples came over yesterday to play Canasta. We went out for dinner, & I made dessert. It was really good & tastes better warm. Despite the length of the recipe, it's easy to make, especially as it can be done a day ahead. There are a lot of apples, but the cake is better with a lot, & I rewarmed the leftover for breakfast this morning. Yum, yum. Brown-Sugar Spice Cake with Cream and Caramelized Apples from Gourmet, March 2006 For caramelized apples 8 Gala apples (3 1/2 pounds) 3/4 stick (6 tablespoons) unsalted butter, softened 3/4 cup packed light brown sugar For cake 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon 1/2 teaspoon salt 1/2 teaspoon ground allspice 1/2 teaspoon freshly grated nutmeg 1/8 teaspoon ground cloves 1 stick (1/2 cup) unsalted butter, softened 1/3 cup packed light brown sugar 1 large egg 1/2 cup dark amber or Grade B maple syrup 1/2 cup sour cream 1 teaspoon vanilla For cream 1 1/4 cups chilled heavy cream 1/2 cup sour cream 2 tablespoons sugar Special equipment: an 8-inch square nonstick cake pan (2 inches deep) Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour cake pan, knocking out excess flour. Make caramelized apples: Peel and core apples, then cut into 1/2-inch-thick wedges. Susy that recipe from BF sounds very similar to my "Elegant Lima Beans" recipe. I have never made it with the older, white dried limas but I'm going to try it this weekend because I have some to use up. Note that my recipe calls for a lot less water than Bobby's. Elegant Lima Beans 4 cups cooked lima beans (I use the green baby limas, the frozen ones, but I'll bet this would be good with the white butter bean limas too. I've seen both green limas and butter beans sold canned some places. I just cooked up a batch of dry limas for the first time last year and I really liked them. I make my beans in the crockpot.) 1 can (15 oz.) tomato sauce 4 oz. shredded swiss cheese. I use jarlsburg, or kasseri cheese, but I'll bet you could use feta. 1 - 3/4 cup chopped walnuts (I use the lower amount, walnuts are high in calories and fat. I'll bet you could even go down to 2/3 cup on those.) 1/4 tsp. dried basil, crumbled, (or maybe a little more, depends on how you feel about basil, I love it) 1 green pepper, diced (I also sometimes add a small diced zuchinni, which you can also add or sub. for the green pepper since some people don't like peppers. Can also use celery if you like it. Start with what you know you will like though. The additional veggies add more good fiber but I guess you could leave them out if you hate those green veggies.) 3/4 cup water or veg. broth, unsalted if possible 1/2 tsp. salt (you could experiment with less, I almost always use less than the recipe calls for, or even omit because canned tomato sauce has salt in it. I get unsalted veg. broth bouillon cubes in the health food section of Wegman's, but if you can't find unsalted broth, then use water or leave out additional salt.) 1/4 tsp. pepper minced parsley to garnish Combine cooked or defrosted limas, vegetables, tomato sauce and water or broth. Simmer 10-15 min. until vegetables are just starting to get tender. Mix in shredded cheese and walnuts, and bake in 350 degree oven for 30 min. Notes: You can toast the walnuts in the oven as it is preheating before adding them to the casserole, but watch them carefully so they don't burn. Usually about 8 min. in the oven at 300 is enough to toast. I hardly ever have fresh parsley so I stir in about 1-2 tsp. dried parsley to the stew before putting it in the oven.

"For example, are horticultural beans synonymous with shelly beans? Or are there other shellies? It seems to me that cranberry, borlotto, and maybe Wren's Egg are very similar, at least by their description. Are they subtle variations of the same bean?" While the description of "horticultural beans" is hazy at best, I tend to agree with Fusion's assessment. They are generally considered to be beans with fibrous hulls, grown for dry/shelly use only. As to the different groups (bird egg, borlotto, horticultural), some of the varieties within them may be nearly identical, just with different regional names. The borlottos seem to be the most diverse in terms of their commercial offerings. That being said... I have collected quite a few "snap" beans whose seeds are nearly indistinguishable from the horticulturals, with the same large seeds & red-striped white/tan seeds. The largest P. vulgaris shelly I have found, "Bird Egg #3", is one of these. While most (if not all) horticultural beans make good shellies, there are many snap beans which also make good shellies. There are also large-seeded beans in colors other than red & white, such as the black & white "Chester" (aka "Flagg") and the red, tan & white "Porcelain" (aka "Snowcap")... and of course, many white cultivars. Nor should smaller-seeded cultivars be automatically discounted, such as "Rose", and the previously mentioned "Soissons Vert". "Does this mean that shellies mature earlier than limas? " "I've noticed many shelly beans offered for sale come from warm climates, like southern Appalachia. Can I assume that some will, and some won't, grow well in more northern areas?" As Fusion mentioned, the lines overlap somewhat. There are a few early limas, and some rather late P. vulgaris beans, such the October beans. My experience is that some of the Appalachian beans (such as "Rose") fall in this category, while others (such as "Ma Williams", aka "Goose") do not. The earliest pole shellies - such as "Goose" and "Chester" - will be far more reliable in cool climates than the earliest pole limas. "Can you suggest a lima bean that might do well here in PNW runner bean country?" Probably not a pole variety; "Sieva" or "Red Carolina" would be my best recommendations. The bush varieties "Henderson" or "Thorogreen" would stand a better chance. All of these are small-seeded, I don't think that the large-seeded varieties could mature in a cool Maritime climate. You would probably need to start pole varieties early as transplants; that is the only way they perform reliably for me in my Wisconsin climate.

Looks like yellow split peas. Lee, did your soup have any meat in it?

Lacey, I don't want to hijack your thread, but I hope you'll enjoy looking at the link also - more pictures of making the soup below the recipe.

Gina, the soup did not have meat in it. It was a recipe from Whole Foods for yellow split pea soup - I used Toor Dal instead. It was very good, it's just that I expected the sweet potatoes to add a WOW factor to it and instead they just blended in. You will notice the mound of Korean ground red pepper that I used in the pictures. It took a fair amount of spices to give this character.

Well, I'm going to try my soup with the Toor Dal Kory, and here's the recipe, which I've made several times before with both yellow split peas (hard to find which is why I bought the Indian product when I ran across it) and with green split peas. It tasted the same--absolutely delicious-- but wasn't as pretty.

Split Pea Soup with Spiced Yogurt

2 Tbl butter or 1 Tbl each butter and oil
1 large onion, diced
2 cloves garlic, minced
1" piece ginger, diced small
1 bay leaf
1 tsp salt

Saute the above ingredients in the butter/oil until onions are soft. Add:
1/2 tsp whole cumin seed
3 cloves
Stir and cook 3-4 minutes

Add 1 2/3 c. split peas, soaked 2 hours
2 stalks celery, chopped
2 med. carrots, chopped
6 c. water or stock

Cook about 1 hour. Puree soup and return to stove and add more liquid if needed. Season with salt, grated lemon peel and juice of one lemon.

Serve with the following for topping:
1/2 c. yogurt
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp cayenne pepper
1/4 tsp ground cumin

This makes a delightful change from the split pea soups we grew up with.

Your recipe does sound good Lacey - I especially like the spiced up yogurt topping and the fresh ginger in the soup. I'm saving the recipe to try soon.

Lee, I saved that recipe to try later from the pea soup thread. But over there I see you say it needed more spice than called for. To me it looks like a lot of seasoning for one cup of peas and a quart of broth. What was it missing? Or do you like highly seasoned food? That looks like a lot of cardamom to me, for one thing. Just curious before I try it. I like the combination of flavors, just wondering about intensity.

Eileen, we do like spicy food, but this was not overly spicy. I doubled the recipe which is why the photo of the dish of spices looks like it has a lot in it. I may not have mentioned that in the thread but if you compare all the ingredient photos with the written recipe everything is doubled. Sorry - that was a bad omission on my part. I'm sure I would have read the recipe and immediately thought that I wasn't going to do that much work to wind up with a small amount of soup. I would have used more of the ground Korean red pepper because it is not anywhere near as hot as cayenne. I'm not sure if you saw my comments linked above to Toor Dal soup or if you read about the soup on the pea soup thread. It is the same Whole Foods recipe but I didn't post on the pea soup thread. The soup does really need the spark of the lemon squirted on in the bowl.
