How come sugar has turned into a full fledged cake ingredient?

Isn't it supposed to be a spice?

I just baked an American Sponge Cake - the Joy of Baking recipe. It came out just like in the photo. Texture is great. Aroma is great. But - it's way too sweet and this spoils it for me.

The recipe calls for 1 cup sugar. I'd like to cut it to half a cup. Can I just do it? or should I sub something instead? I don't have any sugar health issues. I just don't like cloyingly sweet things.

American Sponge Cake:
6 large eggs, separated

1 cup (100 grams) sifted cake flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup (200 grams) granulated white sugar, divided

1 teaspoon pure vanilla extract

2 tablespoons water

Zest of a lemon or orange (outer skin)

3/4 teaspoon cream of tartar
