Non-Stop Cooking (warning! pics heavy!!!)

The Holidays had been cooking crazy everyday. Many meals for many days for many visiting friends and families.

While it was hectic to get all the dishes done and served, it was very manageable with some proper planning and having the sous vide cooking equipment. For instance, almost all the meats were cooked and readied many days in advance. I even got to sit and mingle with everyone and not stuck in the kitchen much.

The only thing was not having the time to take some decent pictures.

Here they are, I only was able to photograph less than half of what I actually made.

I feel I should point out those are not bacon "rings", they're square :-)

What is the cover charge for one of your Food Extravaganzas? I would love to hear what your guest (lucky devils) think about these works of food art or have they been indulged so much as to be unexcited and satiated?

of course it can succumb easy to bright light and water. the fact i found and easy way to eradicate scarlet trumpet vine, blood meal, simple as that, speaks volumes. people gripe about trumpet vine almost as much as ivy. trumpet vine, campesis radicans, makes a great bonsai, as does ivy. ivy dies easy, too much light and it's a goner, too much water it has no hope, same with over drying. So potted plants are not much to fear in terms of invasive potential, here, it is the yard plants that are the concern, root potential is increased and plants have plenty of room too frolic. Really who wants to spend the money on removal or a city ticket for blight. Rats are something that no one wants around, from lassa virus in africa to plague here in the states some of the worst diseases are rodenta spread. The Native Americans had a problem with rats that led to a bad virus years ago, on reservations. With rats come warfin based chemicals, snakes, strays looking for a snack and other wild life and chemicals that equals a bad mess. Here we have rattlesnakes that get as big enough to eat prarie dogs. While the snakes can be rustled and cooked up, taking a stroll on a bike to capture photos of places that do not belong to you, it could cost you your life by the bite of a big fat rattler, that could be longer than you are tall. We don't see rats here and field mice don't last long. It's buzzards and snakes, gophers and ground hogs where termites and wood boring beetles are more threats to homes and trees than ivy ever could be. People do not always realize the danger, size and longevity of snakes. Killer bee's could just enjoy the heck outa ivy as well as they do public trash cans here. You see more cactus and scrub trees here than you ever will ivy. Trumpet vine struggles here, but with proper watering, thrives, which is amazing. Rabies pops up occasionally from the strange rodents and wild canines. So, really, griping about neighbor's ivy is comical to me, even cute. Here you watch where you walk and listen for the rattle and don't gripe about neighbor because they might be the very people who warn you about the snakes or tell ya to watch out for the buzzard. I'm sure your neighbors were happy to see veggies, even bolting crops, over the weedy yard, Spaghetina. Here's a couple of suggestions I have from my time growing organically up in SF and Marin. 1) Most of those flowers of the bolted veggies are edible and tasty. While the leaf flavor has turned bitter through the winter and the taste change that comes with bolting, the blossoms often gain a very interesting taste that is great topping salads or lightly fried in certain dishes. 2) If like germinating your own crops from seed, remember which of your crops are heirloom (their seeds will usually produce true) and which are F1 or other hybrids -- it's seed is typically still viable, but may have very different characteristics than the parent. The GW seed exchange forum is a great way to get those exotic seeds you mentioned w/o having to pay catalog prices or drive all over the Bay area, but you need your own seeds to reciprocate. Some of the best plants & veggies in my yard are from trades I've made with other GW members. 3) To my way of thinking, your soil mix seems too heavily focused on decomposed organic matter and doesn't take advantage of the alkaline SF clay topsoil and it's associated soil flora. The compost/purchased soil is great for nitrogen and drainage and you can artificially pump up the P/K/Fe to grow good veggies & plants in it, but organic amendments like blood & bone meal, fish emulsion, seaweed and others need bacteria & fungi to free the nutrients for your crop's roots. That's generally not true for soluble inorganic amendments, which is why they are popular. There's definitely a risk of adding weed seeds by using your yard's topsoil in the garden beds, but that soil food web is necessary for growing good organic crops, IMO. For plants that need lots of N and like great drainage, I go 2/3 purchased soil/fully composted organic matter and 1/3 native topsoil. For tomatoes, peppers and others that suffer in N-rich soils, I use 2/3 native, 1/3 organic matter.

Jim, you made such an excellent choice! I love your roses because they all are known to have amazing fragrance to them! I try so hard to get roses with fragrance, but not always do I luck out... Zyperiris, I would definitely get Gemini from Jackson & Perkins...You will have better luck with them having fragrance at J & P because not all Gemini have fragrance...I love the scent of mine (smells like honey and and peaches)...Advantages of Gemini are that they flourish and look beautiful even in 95-97 degree heat; they are rated exhibition form roses by the ARS and are highly resistant to diseases and are very vigorous! Fragrant Cloud makes...delicious rose petal jelly--haha! man, when I eat that stuff I feel like I'm eating plums, super-saturated kick-pow jam, it's got flavor intensity to the max. It's got a very strong nice perfume, but my favorite perfume will always be Mr. Lincoln. Disadvantage of Fragrant Cloud is that it is very, very difficult to color match whereas Gemini looks beautiful anywhere you plant it! Special Occasion is a very beautiful rose but!!!!!it's got a split personality. It has a classical very lovely shape from young to maturity blooms, but once it's past mature it becomes an antique Souvenir bloom (google search Souvenir de la Maison) and you'll know what I mean. If you don't like the curliness and petticoat shape of this type of antique rose, you may not like Special Occasion... You see Special Occasion is a long-lived blossom, it takes forever! for it to fade and thus it has a split personality-- a breathtaking classical hybrid tea, but once its past its mature bloom stage, it becomes a cute petite OGR. It is now currently sold by Vintage Gardens. Mine was supposed to be exceptionally fragrant, but in my opinion it is only medium in fragrance so far...Also with Special Occasion it is OUCH!if you pick it up by the blossom neck-it's like a bristle brush of very tiny miniscule thorns...

Thank you everyone for your nice comments. Hosta flower buds are very tender and delicious. The flower itself does not have much taste, just for looks. Cauliflower grilled, as you know, really delicious. I am having fun with cutting beets as thin as paper using a single-bevel knife. Much thinner than a mandolin can slice. Jasdip, sous vide can cook meat from raw to very well done, and anywhere in between, without fail, precisely every time. That's the whole idea. You just set the temperature and walk away. Timing is not that critical. There is no skill involved. dcarch

I really like the oxtail in couscous. Looks beautiful and sounds like a good combination. That is a crazy amount of cooking! Congratulations for surviving it!

Thank you everyone. Good thing there were many items on sale the weeks before the meals, otherwise I would be in serious $ trouble.

Prime ribs $4.99 a lb.
Chickens $0.97 a lb.
Short ribs $4.00 a lb.
Leg of lamb $2.99 a lb.
Pork rib roast $2.00 a lb.

Ox tail was expensive, $5.99 a lb

John, a few other dishes I did not post, ducks ($1.99 a lb) 3 ways. Stuffed chicken, etc.

O , let's see. I will have the prime rib, and then the oxtail, and then curry shrimps. Oh no I am getting a bit full. SCREAM. It is all freakin fabo! Thank you, again our dcarch for a buffet of wonderful awesomes. Yummmmm!

The couscous photo reminded me of the ptitim of my childhood, so I checked and wiki told me that ptitim (AKA Ben Gurion rice) goes by the name "Israeli couscous". I had no idea.

Amazing how an austerity period food has turned into a gourme item.

Cod with black garlic Meyer lemon sauce looks yummy ... I love seafood. Thank you dcarch, for a great show, great ideas !! Beef oxtail is expensive, but it's great in the Vietnamese pho soup (with white noodle).

Thanks again everyone.

You will notice that my pictures are gone. The reason is that when someone views this thread, it occupies digital band width traffic from/to Photobucket, the WEB site where these pictures are stored. If there is a lot of viewing then the bandwidth traffic can exceed 10 GB, the allowance is used up for the month.

This is temporary. The pictures will show up again when the next month's allowance starts.
