For those inquiring minds, I just spent a couple of days with Bachelor #2, Elery. Ashley says I should keep this one. He is sweet and kind, smart and funny. I liked him a lot and he put up with my nonsense.

Jessica suggested I take him to see Dad and so I did. Dad likes him too! While we were there, we decided to check out the new beef:

Although Elery is not a "horse person", he was game and rode Copenhagen. Since Cope is afraid of men, I was impressed, even he liked Elery and didn't misbehave.

I wish I'd have taken a picture of his gift to me. He brought me a copper bowl for whipping egg whites. LOL He could have taken the easy way out and just gotten flowers, but instead he put some conscious thought into it and got me a more meaningful gift. I was impressed.

OHMYGOSH - I'm in love!! (and Elery's cute too!!!). That horse is so gorgeous, and he actually let a stranger ride him with no problems. What a good boy he is! Annie, Elery sounds like a keeper. After all, how many guys would get up on 1200 pounds of unknown horse flesh for a girl they've only known for a few weeks, AND meet her dad, AND give her a copper "egg white beating" bowl????

Oh yeah, he's good, really good. But Copenhagen is MAGNIFICENT. Ashley sounds like she's got the situation sized up pretty good.

Here's another TERRIFIC recipe that calls for 1/2 pound of ground beef. So terrific, in fact, that next time I will double it and use a whole pound anyway. Actually, now that I think of it, it called for pork, but we don't eat pork, hence my substitution. But it was so heavenly with the beef, I was dreaming of the leftovers. I made this last week for Chinese New Year. I had a lot of napa cabbage and looked through my Chinese cookbooks for something different to do with it. I had potato cellophane noodles on hand, so I used those. I think it will be even better with regular ones. I will be making this often, not just for Chinese menus -- it is a GEM of a recipe because not only is it seriously delicious, it is SO fast -- on the table in about half an hour (at least if you already have minced ginger and minced garlic on hand), but it tastes like it's been simmering all day. Meatball Soup (Baitsai fensz rouwan tang) Adapted from "Harmony of Flavors," by Yung-chi Chao Chen, who writes, "This is a very delicious and substantial soup which combines meat, vegetables, and bean thread. It can be prepared and heated up before being served at banquets as well as at family meals." 2/3 lb. Chinese cabbage (celery cabbage or napa), about 3 cups, 1 1/2" sections 2 oz. dried bean thread (cellophane noodles) 6 cups water 1 1/2 T soy sauce 1/2 t salt For the meatballs: 1/2 lb ground beef [orig. recipe called for ground pork, about 1/4 fat] 1/4 t salt 1 T soy sauce 1 T minced scallion 1/2 t minced ginger root (I keep it already grated in the freezer) 1 t dry sherry 4 T water 2 t cornstarch Preparation 1. In a bowl, mix the meat with the salt, soy sauce, scallion, ginger, and sherry. Add water, 1 tablespoon at a time while with a spoon or a fork, mixing in one direction until all the water is used up and the meat has become a smooth paste. Sprinkle in the cornstarch and mix well. 2. Soak the bean thread in hot water for about 5 minutes. Drain and cut the thread into 6 inch lengths. 3. Wash the cabbage and drain. Cut the cabbage stalks into 1 1/2" sections. Cooking In a saucepan bring 6 cups of water to a boil. Add the cabbage, bring back to a boil, and then simmer for 5 minutes. Add the salt, soy sauce, and bean thread and cook for another 2 minutes. With a spoon scoop some meat mixture and with the help of the palm of your left hand, form the meat into a ball about 1 1/4" in diameter. Wet your left hand beforehand and also dip the spoon in a bowl of cold water every time you start a new meat ball. Drop the balls in the boiling soup one by one until all the meat is finished. Cover and simmer for 5 minutes and serve hot. Gung hay fat choy!

Home Cookin 4.9 Chapter: Recipes From Thibeault's Table High Heat cooking Instructions General Instructions (for Barbara Kafka's "Roasting A Simple Art") "Different meats and different cuts have different cooking times. That's why there are recipes. I did try to find a universal rule so that I could say as I do for fish, "ten minutes per inch" or for chicken "ten minutes per pound," and then describe the exceptions. It didn't work. Timing is as much a factor of fat content, bone content, and the shape of the roast as a specific kind of meat. The only easy rules are for boneless loin of pork or beef (the shell or strip) and venison and beef fillet. They always cook in the same amount of time since the only way they increase in size is according to their length, which will not influence the cooking time." This is her recipe for a Simple Rib Roast 4 1/2 pound without short ribs Standing rib roast (2 Ribs) or 26 Pound standing rib roast (7 ribs total) 2 to 6 cloves garlic, peeled and slivered Kosher salt to taste Freshly ground black pepper 1/2 to 2 1/2 cups red wine for deglazing 1 recipe for Yorkshire pudding. Roast should be at room temperature, not taken directly from the fridge. Place oven rack on the second level from the bottom. Heat oven to 500F. Place small roast in a 14 X 12 X2 inch roasting pan. bone side down. The large roast will need an 18 X 13 X 2 inch roasting pan. Snuggle most of the garlic, is using, under the fat and spread remainder under the meat. Season well with salt and pepper. Roast for 45 minutes. With meat in oven, reduce heat to 325° and roast for an additional 3 minutes per pound.( i.e.: 4lb =12minutes, 7lb = 21 minutes, 26 lb =78 minutes) etc..Increase heat to 450°F and roast for another 15 minutes regardless of size. Meat temperature should read 135 on an instant - read thermometer. If you like it more rare, reduce the additional 3 minutes per pound to 2 minutes or for less rare, increase the 3 minutes to 5 minutes. Remove roast from oven. Transfer to a serving platter. Pour or spoon off excess fat, reserving about 1/8 cup to 1/4 cup of fat. Put pan over high heat and add wine. Deglaze pan well scraping with a wooden spoon. Let reduce by half. Pour liquid into a small saucepan and reserve. For Whole New York Strip Loin, the directions are a little bit different. According to Barbara Kafka's instructions, it doesn't matter what size the New York strip roast is the directions are the same. Roasted New York Strip Loin one 10 pound New York Strip (16 inches) Trussed 1 head of garlic cloves lightly smashed and peeled, optional 3 to 4 springs fresh thyme kosher salt pepper 1 1/2 cup basic beef stock or a combination of beef stock, veal stock or red wine 2 tablespoons basic veal glaze optional. Place oven rack on second level from the top of the oven, or second from the bottom if the fat cover is thick. Heat oven to 500°F. Place strip of beef in an 18 x 12 x 2 inch roasting pan. If using, slip whole cloves of garlic between underside of meat and string. Tuck in the thyme. Slip some more garlic under the string along the top of the meat. Sprinkle the meat on all sides liberally with salt and peper. Put into oven one hour before it will be served. Roast for 40 to 45 minutes. Remove and transfer meat to a platter. Cut off strings. Remove the garlic cloves that are too blackened to use. Pour fat from pan. Put the roasting pan on top of the stove. Add stock or wine and the veal glaze, if using and bring to a boil, scraping the bottom vigorously with a wooden spoon. Add flavorings, if using, and any juices that hae collected in the platter on which the beef is resting. Let reduce by half. Taste for salt and pepper, pour into a sauceboat and serve. Roasted Whole beef Fillet According to Barbara........"I buy the meat by the inch. It cooks exactly the same way no matter the length as long as it s more than 4 inches long. When ordering, I usually allow about an inch and a quarter per person and an extra half inch for the two end slices. By this rule, six people will require an eight inch piece of fillet. The muscles in a fillet all run lenghtwise so that when it is sliced acrossed the serving it is also tenderized. The fillet is also called the tnederloin, and it is tender. It is a long round muscle that hides behind the bones on which the shell steak and the rib roast reside. T-bone steaks have some of the shell and, on the other side of the bone, a circle of the fillet, or tenderloin. A filet mignon is a slice cut acrossed the whole fillet to make an individual steak. 4 to 5 pound whole beef fillet (about 3 to 3 1/2 inches in diameter, a good 18 inches long) 1 tablespoon unsalted butter at room temperature 1 tablespoon olive oil 2 teaspoons kosher salt 1/4 teaspoon freshly ground black pepper 3/4 cup red wine for deglazing, optional, or 1 recipe semi-perigourdine sauce Place oven rack on second level from bottom. heat oven to 500°F Place fillet in an 18 x 12 x 2 inch roasting pan. Rub fillet with butter and oil. Sprinkle evenly with salt and pepper. roast for 10 mintues. turn. roast 10 mintues more. Transfer fillet to a serving platter. Pour or spoon off excess fat. Put pan on top of the burner. Add the wine or sauce and bring contents to a boil while scraping the bottome of the pan with a wooden spoon. Let reduce by half. Season with salt and pepper.

Tried this the other night--sort of "cabbage rolls/Polish Pigs" without the rice-- nice change of pace. Diane's Home Cookin Chapter: 2014/15/16--to try--main dishes & sides Unstuffed Sweet-and-Sour Cabbage ================================ source: Gourmet 11/2008 1 (2-pound) head green cabbage, quartered or cut into sixths-- lengthwise and cored 1/2 cup reduced-sodium chicken broth 3 garlic cloves, thinly sliced, divided 1 large onion, thinly sliced 1 tablespoon olive oil 1/2 pound ground beef chuck 1/2 pound ground pork 1 (28-ounce) can whole tomatoes in juice 1/3 cup dried cranberries 3 tablespoon red-wine vinegar 1 tablespoon packed dark brown sugar 2 tablespoon chopped flat-leaf parsley Accompaniment: steamed rice . Cook onion and remaining garlic in oil in a heavy medium pot over medium heat, stirring occasionally, until golden, about 8 minutes. Increase heat to medium-high and stir in ground meats along with 1/2 teaspoon each of salt and pepper. Cook, stirring and breaking up lumps with a wooden spoon, until no longer pink, about 3 minutes. Stir in tomatoes with their juice, cranberries, vinegar, and brown sugar and simmer, uncovered, stirring occasionally and breaking up tomatoes with spoon, until slightly thickened, about 20 minutes. Season with salt. Sear cabbage pieces lightly in bacon grease then place in a deep 12-inch heavy skillet with broth, 1 garlic clove (sliced), and a rounded 1/4 teaspoon salt. Bring to a simmer over medium heat, then cook, covered, turning cabbage occasionally, until very tender, about 45 minutes. (Add more broth or water if necessary.) Pour sauce into skillet with cabbage and simmer, uncovered, 5 minutes. Oh no, those children aren't even related to me. When I saddle Copenhagen every kid in the neighborhood gravitates to my gate. LOL Those are the neighbor's kids, it's the first time they rode because they're the youngest in the neighborhood. I took pictures at their Dad's request so their very pregnant mother could have the photos, he didn't want to make her walk across the pasture with a camera. Oh, and the Dad rode too!

So, Elery not only got to meet my family, he got to meet 11 (yup, eleven) children, including my much bigger great-niece and nephews, all lined up for a ride on Cope. I oughta start charging for the "horsie rides"!

and saw that first picture, I thought you were talking about keeping one of the COWS and not sending him off to slaughter because "this one" was smart, kind, sweet, and funny.... Woops! Then I saw pic number two and remembered that this was the same guy from the lunch date! :o) So glad things are going well! Beautiful horse and cows. Elery (who may also be called beef as in beefcake/hunk of man if you think it applies) isn't half bad either! :o) I've never heard the name Elery before, but I like it.

I think a true test of his character will be to introduce him to Miss Evil Jessica, while she's wearing her "I'm Evil" T-shirt. Let her work him over, ask him all the questions which need to be asked, and if he survives, then we know he's a keeper. Sort of a trial by fire, if you will.

AB, whaddya mean "he put up with your nonsense?" Did you tie him up to the back of the Jeep and take him sand drag racing with the top down...on the Jeep, that is. And if so, got any pictures?

Like Bobby, I also like his name, Elery, which is German and it means cheerful. And it looks like the name fits.

Donna, he very well may get to meet Jessica, LOL. His oldest son lives in California and is adopting a 19 month old boy from Russia. Elery will have to go to California "sometime this year" to meet the new grandson. Do you think I should send him to meet Jessica?

Jessica, if you send batteries for that damned thing, I'll personally come to California and break your fingers. LOL Hey, maybe when Elery goes to visit....nah, he's too peaceful, he'd never fight back.

Chase, you're right, and he knows that you all are "critiqueing" him. (snicker) He's a really good sport about it, though, and no, I don't NEED anyone. If I decide to keep him around it's because I enjoy being with him, not because I need to be with anyone at all.

No Sol, I never took the top off. Not off the Jeep either. Ahem. By my nonsense I mean dragging him around the farm, playing with the grandkids and putting up with Ashley's version of "40 questions". He took everything in stride and is still speaking to me. Pictures? Now Sol, you know how I feel about "evidence". (grin) Besides, I'm a nice girl, I'm sure he must have taken advantage of me....or will, if I'm lucky. (ahem)

So "Elery" is German, is it? He says he was named after his Dad, who was named after his Grandfather, who was named after one of the signers of the Constitution.

SharonCB, pictures of the bowl? OK, but I probably oughta put something IN it. He's also got a Kitchen Aid mixer and a big food processor and is trying to convince me that I need both of those things. An enabler, for certain, and a better equipped kitchen than my own!

Annie, I don't want to interrogate Mr. E. Considering you and Ashley, both like him. I trust your views are inerrant. However, if he happens to give you this, not so cabalistic gift, then, I'd say, it's time for some intervention.

In the meantime, let's do away with the: let's shove-his-family-jewels-in-the-George-Foreman-Grill mentality, and just welcome the guy. Who knows, he may have already stumbled onto this forum, in which case... Elery, I was just kidding about the GF grill.

LOL, LindaC, date #3 is coming up next weekend. He works some strange hours in the summer, filling in vacation time, etc, but he's got next weekend off and he's coming north again. He's going to help me plant the garden, LOL.

Fun? I think riding and planting the garden and generally hanging around is fun but he's willing to do anything I want to do. Shopping at Penzey's was fun, and he says if I come to visit him and meet his kids, he'll take me into Ann Arbor to Zingerman's Deli and Trader Joe's.

Amanda likes him and so do the kids, he's got a 20 month old granddaughter, so he plays Candyland like a pro.

So, it seems that everyone in my family approves except my mother who hasn't met him yet.

Oh, and he says his dog is going to just LOVE me.

Jerry hasn't ridden any horses for me or purchased any copper bowls but he has run the Alice gauntlet and survived. Brave man! The hair on Alice's neck finally settled down and she stopped circling and growling under her breath after Jerry had been here for a few days. ;-)

Ann, I think he's pretty handsome, too! We've known each other for over a year but have recently moved into new emotional territory.

Annie, Elery has my vote, too.

I swore off too, for a couple of years, but my willpower isn't that great and I got lonesome. While looking for "just a friend to talk to", I came across Elery. I definitely found a friend, we'll see what, if anything, comes next.
