Booberry, that recipe came from Rick Rodgers, via Readinglady. MThey make a "thumbprint" kind of savory cookie with centers filled with Habanero Gold, they're amazing! Jenn, canning is easy, as long as you use recipes that can be canned safely and things that only need a hot water bath. This year I've done hot pepper jellies, smoky chipotle catsup (thanks Katiec!), pickled jalapenos, salsa, habanero/peach hot sauce, chipotle lime marinade for lamb or chicken, all with a hot water bath. Here's a good one that I've made from the healthy GI diet cookbook: Cranberry-Almond Biscotti ************************* Makes about 20. Ingredients: Juice and zest of 1 orange - (my orange yielded 1/2 cup of juice) 1 TBSP Amaretto liqueur - ( I used 1 teasp almond extract) 1/2 cup (1 x 75 gram pack) dried cranberries 1 3/4 cups (250 grams) (9oz) wholewheat flour 1/2 cup (8 TBSP) sugar substitute (I use granulated fructose) 1 teasp cinnamon 1/2 teasp baking powder 1/2 teasp bicarbonate of soda (baking soda) 1/4 teasp ground nutmeg 1 large egg 1 egg white 1/3 cup (50 grams) (2 oz) toasted almonds, chopped 1. Heat the orange juice, Amaretto and cranberries in a small saucepan just until hot. Remove from heat and let stand for 10 minutes. Drain and reserve the juice. 2. Preheat the oven to 350F (177C) (Gas 4) and line a baking sheet with baking parchment. 3. Mix together in a large bowl the flour, sugar substitute, cinnamon, baking powder, baking soda and nutmeg. 4. In a separate bowl, whisk together the egg, egg white, orange zest and 2 TBSP of the reserved juice. Stir this into the dry mixture until combined, adding more juice if necessary to make the dough moist. Stir in the almonds and cranberries. 5. With lightly floured hands, shape into a 16 inch (40 cm) log, then flatten slightly. Bake for 20 minutes or until firm. Slide log onto a cooling rack and cool for 10 minutes while you reduce the oven to 320F (160C). 6. Cut the log diagonally into 1/2 inch (1 cm) thick slices. Place on the baking sheet, leaving a 1 inch (2 - 3 cm) space between each slice. (I didn't have room to do that...mine were touching.) Bake until golden brown and crunchy, about 25 minutes. Allow to cool on the rack. The Biscotti can be stored in an airtight container for up to 1 week or wrapped and frozen for up to 3 months. I have three soups hand written at the top of my shopping list. (it's a simple spread sheet that has room top and bottom for notes) I just jot down what i'm thinking of making over the next weekend. Beef Barley - probably use a mix of grains, maybe some lentils. It is hearty but not quite a stew. Lots of broth for bread, biscuits or croutons. I add extra stock usually. It will thicken overnight. Freezes great. Make a killer top crust/or biscuit pot pie. Thai Coconut Chicken Curry - Also nice and rich but still brothy. I add a bit of tumeric and sweet paprika for color. Very much like a chowder. Not really a bread companion but we like it with thin rounds of toasted baguette. Potato Leek w/garlic and fennel - I use so much roasted garlic it should be called Garlic Soup. (less garlic for gifting). The fennel is some stalks i have frozen i just add while cooking and remove. I have leeks left over from T-day and lots of garlic. I like to use a few whole baby potatoes removed with some of the leeks/onions before stick blending some of the broth. One regular potato diced and half a sweet potato that get blended for some creaminess. Or i could use some squash/pumpkin from the freezer that i roasted a few weeks ago. I made versions of these with a chili and filled a friends freezer after she had her baby. It's a nice gift. If you google any suggestions, you will find many variations of the recipes. For example i just googled the curry to give me a quick reminder of the ingredients... i've never used fish sauce. I might add some shelled edamame. This Beef Barley is similar... I think it's a swell gift idea and would be pleased to find it in my stocking so I hope your gifts were received with good cheer, Lynn. My friend's son recently had his done and was tickled to find some Australian native DNA in his background. Scandinavian/German/Italian was all that was in the oral tradition of the family, so it was a neat surprise. Our family's Ancestry.com hobbyist received an email from a "surprise" cousin that we did not know we had, after several family members' DNA was registered. Photos were exchanged and yes, there is no way to deny the blood kinship--he looks just like the rest of us, poor fellow. The generation of folks who might have been shocked/hurt by this surprise family member are all gone, and I am glad for him that his lifelong question of paternity could be answered. I can see that it might be awkward for younger families who find out they have siblings they never heard of, but I'm a fan of sunlight in dark family corners-- and I also think it's time that some kinds of families stop acting like those situations never happen "among our kind of people", lol. I also had my dog's DNA done and I'm getting our newer dog's done, too. Very fun to find out what went into these rescue/shelter mutts we love.
