fruit tort; so fast and easy

My friend gave me a recipe for a fruit tort that I made yesterday for my DH. Told him he had to share with our elderly widowed next door neighbor. (DH doesn't eat sweets but wasn't happy that I made a large tort for the homeless shelter but didn't save any for him!) It's rich but not overly sweet. I used frozen blueberries from our freezer.

FRUIT TORT

1 C sugar

1/2 C butter (1 stick)

2 eggs

1 C flour

1 tsp baking powder

1/4 tsp salt

Cream sugar and butter. Add eggs and then dry ingredients. Pour and spread into buttered 9" springform pan. Cover with fruit: 1 pint blueberries, 24 halved pitted plums, skin side up, or sliced apples or peaches.

Sprinkle top with sugar , lemon juice and cinnamon. SPRINKLE FLOUR WITH THE FRUIT IF JUICY BEFORE PUTTING ON TOP OF BATTER. Bake at 350 for 30-45 minutes, or until golden.
