OH MY GAWD!!!!!!!!!!

These are spectacular! When I opened the box, my younger son immediately wanted one - so we shared (they are HUGE)! When I got back to the kitchen my little elf had eaten 2 more! LOLOL!

He has put me on strict instructions to make more for daddy and nick since he is planning to finish them instead of dinner tonight! LOLOLOLOL!

He said Santa may want some too so I better plan on a double batch!

Folks, Alexa is NOT kidding. These cookies are wonderful. Sherry put them in this beautiful tin, too.

Scott just returned from Houston and I told him when he came in the door that he HAD to try them...now I'm hittin myself up side the head for that one. I will have to find a GOOD hiding spot - lol.

These are called Santa's Helpers. And i will definitely be attempting them. Like Sherry said the texture is wonderful and the flavor - out of this world. She described as a crunchy cookie with a chewy filling.

Wow, I can't believe those got there already, I just mailed them yesterday! I used the rice flour in the swap cookies, Readinglady was kind enough to send it, along with the Callebaut chocolate I dipped the cookies in. I made another batch with cornstarch though, and it was just as good. I did use powdered sugar because I couldn't find superfine. I really liked the ones with the crystallized ginger, although I sent Jayne the mocha. That's because I had already eaten the extra ginger ones. LOL (Not really, Jayne, it was because you said you didn't care for gingersnaps so I figured ginger wasn't a good idea) It's definitely a keeper recipe, thanks to Readinglady. I'm glad you liked them, Sherry, I know you said you really enjoyed shortbread so I figured you'd be the "expert" cookie tester. (grin) Annie

Thank you Debbie, glad you enjoyed them! I'm relieved someone got them, I was beginning to worry. I sent them on Wednesday and was promised 2-3 day delivery, today I was wondering if they were all going to come back as undeliverable, lol. Brave! Ha! This was my first time making the Florentines, the recipe I used produced an ultra delicate cookie, which I tried to stiffen up by turning into a sandwich cookie, but they were still so fragile. Glad they survived. (P.S. I thought I'd put four Florentines in each box -two packages of two - I know I made ten two-packs. I must've goofed if you only got one, awfully sorry.)

Oh my, didn't I have a wonderful suprise yesterday! Got home to find a parcel from Erie PA waiting for me. The name and address meant nothing to me. I opened it to find a beautiful large tin of Pizzelles from Petrone's in Erie, sent to me my Brenda! There are three flavours , Anise, Cinnamon and Vanilla, they smell divine and look so pretty! This will be the perfect accompaniment to the Trifle I made for dessert tonight! Brenda you really shouldn't have gone to the trouble with all you have been through but I truly appreciate it! I am glad you both liked them. I was so worried. They are not pretty or fancy looking Christmas cookies. They are just yummy cookies.
I gotta tell you: I was pretty disappointed when I got home tonight. Tuesday brought Debbie's pistachios cookies (All gone by Wednesday morning), Wednesday brought Annie's luscious shortbreads (finished the last one off when I got home from work) so I walked in the door and said to DH, what cookies did I get today??? He said None. Waaaaahhh. I want to get cookies every day for the next two weeks, lol!

You've got to be kidding - They are amazing. Um... were amazing.

I agree with Stacy. These are definitely keepers. They will be added to my baking list this weekend.

Oh my gosh! I love these! They look great and they are huge. My mother keeps trying to steal my tin. :)
I love the smell and they are beautiful. How am I gonna keep from eating all these great treats before the party?!
I don't think I have the will power! I love the card you printed up with the recipe. Everyone here is so crafty!

Ooooh I have my cookies form Sherry and they are delish! Meredith and I each had one, the rest went in the freezer. I love the texture and the taste.

Sherry , Meredith asked that I make a bunch and send them to her in her next care package......that's the height of compliment!

Picture will follow as soon as a find the $%#@^&^ wire that goes from the computer to the camera.....

chase, I ws so worried. They surely must be kinda stale by now. The post office promised maximum five days: that was 8 days ago! I told DH I wish I would have sent you caramel turtles instead, which I think would have fared the long trasnport time better. Oh well, next year maybe.

Sherry actually they were not stale at all...promise....I'm not fibbing !

However the same will not be true of the ones still en route to you. Lessons learned, but stale cookies sent in friendship, and the spirit of the season, are way better than any others. It matters only how we accept the gift that others give us , the actual "stuff" matters not. I feel a wee bit sorry for anyone that cares more about the quality of the "stuff" than of the intent of the sender.

Well, I suspect they came yesterday, but they needed a signature since they were international, so they would not leave them. I went to the post office at 4:30 to pick up my Canadian package, and the line was a block long...I kid you not. When I got up to the counter, the package was still with the mail carrier, so I have to go back today. LOL. So, by the time I get them, it does not matter if they are moldy, they are gonna taste awesome! LOL. (I am kidding about the moldy) Incidentally, my DH was only out of the house a total of an hour yesterday...of course that is when they tried to deliver)
