Upgrading RAM question

A year ago, I built my first desktop using components that were bundled together from an un-named website. The specs on the motherboard are as follows:

Number of Memory Slots
4x240pin

Memory Standard
DDR3 1333+ (O.C.)/1066

Maximum Memory Supported
32GB

Channel Supported
Dual Channel

The bundle came with a 4GB "CORSAIR XMS 4GB 240-Pin DDR3 SDRAM DDR3 1333 Desktop Memory Model CMX4GX3M1A1333C9". I purchased a second one for good measure, and have been running on 8GB all year.

Now, I would like to upgrade my RAM to 16GB. Why? I dunno. Just because I can. One day I will thank myself.

Anyway, my question is, what exactly is "Dual Channel"? Does this mean I should get 2x4GB of the same memory stick, or can I go with 1x8GB of the same model? Are there advantages or disadvantages of going with one over the other?
