i had only heard of this once or twice before and spotted a recipe from lars that i wanted to try. couldn't find any of it here so i wrote and asked if it was important to the recipe? he assured me it wouldn't be right without it and both he and ellen sent me some--wasn't that sweet? lots of time around here if you ask, you will receive... anyway, his original method is good but i've also simplified his recipe and marinate chicken pieces and then grill them. either way will work just fine! but do try it--always nice to have another chicken recipe. Algerian Roasted Chicken  -- Lars--based on recipe by Chef Farid Zadi 1 whole chicken 4 cloves of garlic 1-1/2 tbsp Kosher salt 1 teaspoon of sumac 1/2 teaspoon of sesame seeds 1/2 tsp coriander seeds 1/2 tsp fenugreek 3/4 tsp cumin 3 tablespoons of butter, room temperature 1 tbsp minced Thai basil (or 1/2 tsp fennel) 2 lemons 1 tbsp extra virgin olive oil Freshly ground black pepper extra herbs, 1 tsp each minced fresh oregano and basil, optional 4-5 sprigs of thyme Start charcoal for outdoor barbeque, using large chunks of mesquite wood and charcoal Place the chicken in a roasting pan with a rack. Slide your fingers under the breasts to separate the skin from the meat, turn the chicken over and do the same with the thighs. Mash the garlic with 1-1/2 tablespoons of salt in a mortar and pestle or finely chop the garlic and incorporate the salt into it with the side of your knife or back of a spoon. Add the sumac, sesame seeds, coriander seeds, fenugreek seeds, and cumin and mix to pulverize the seeds. Add butter and basil and combine to mix. Tuck pieces of the butter into the "pockets" under the skin. Squeeze the juice of one lemon all over the chicken, drizzle with extra virgin olive oil, sprinkle freshly ground black pepper. Season the cavity with pepper, tuck in the lemon halves and more herbs into the cavity if desired. Place the chicken on the barbeque and cover, leaving vents fully open to maintain heat. Baste the chicken every 15 minutes alternating water and pan drippings. Midway through cooking turn the chicken 90 degrees. Continue frequent basting. The cooking time for a 3-1/2 pound bird is about 1-1/2 hours, depending on how hot your fire is. Cook to an internal temperature of 160°, measured in the thigh. Let rest covered about 30 minutes before carving. Squeeze fresh lemon juice into the roasting juices, and pour into a gravy boat. Add salt, if needed. Serve with roasted potatoes, green salad, and French or Italian bread. Lars

i have same problem like yours but mine is probably worse, Cuz im in between them and they do run the show in my neighborhood they got all my neighbors not to like me.And i live in my neighborhood for more than 2 decades and they are new in the neighborhood .I wave when they wave at me if they dont i dont.If they dont like me i dont care cuz they are not paying my bills but why destroying my property and i worked hard on my property i dont hire people to do my landscaping even my tree i cut my trees too but now everything is looking bad cuz they are spraying .I put cameras all over my house but it dont stop them. They are doing crazy things on my camera .I just ignore.it. I have no clue why they are doing it to me unless i got the nice yard in my neighborhood i keep my yard clean spotless.And one thing i was out of town and my son was the only one in my house they came to my backyard i guess my son showed them my backyard , i got nice backyard and i guess when they are in my patio one of the neighbor next to me said that "your mom is living in her own little world driving her cadillac" and i guess neighbor was all laughing .Im busy i keep myself busy in my house im a widowed and im doing everything in my house the maintenance and everything plus my daughter is a special need.I dont have the time to hang out with neighbor like them that they hangout almost everyday till midnight;, So what i did i invited them one time since they came to my house while i was out of town guess what nobody shows up ,And comes NEW YEARS EVE i always have party on New Years Eve cuz my late husband gave me a surprised party before he passed away so since then i have New Years Eve party , one of the neighbor texted me and invite themselves just the couple and next thing i know there will be 8 people so i said ok cuz the couple said they are also our neighbor , they came and in 10 minutes they left and only one couple say goodbye to me the rest they left without saying anything .I treid my BEST ....And i know for the fact if people are doing bad things to you theres something wrong with them. . one day theres a barbecue in the neighborhood and they invited me an hour before the barbecue , and i look at the window and some of the neighbors are bringing bowl of food. And so i said thanks but i will pass cuz i knew im not invited they cuz if they want to invite me they will invite me one week or whenever they did plan it.And besides im not going anyway even they did invite me cuz of ny daughter when shes home we stay home.And i told them thx but my daughter is home now and she is special needs and txt me back said just next time., Not only killing my trees and plants they are spraying my drivway and my garages door and the outside walls of my house thats why the paint is coming off my wall and my screen too.When i put the camera what he did he spraying my plants and tress thru his oranges tree. I can tell where it coming cuz u can see the hole his making to destroy my property my furniture on my patio , my heater , my barbecue island my pool deck everything outside my house., everytime i trimmed my plants or trees and if something fell in their yard i tried everything to clean it by using my rake while im sitting on top of the fence they do see me cleaning it . Everytime im doing something or somebody is working at my house they want to know.It likes i hired a guy to put motion light on jmy backyard suddenly im seeing them by my yard and when i walked out they walked away and i was wondering why till i put two things together.And when i confront her cuz i already see the damages on my yard and she told me that i was spying on them and i was surprised cuz i guess that one neighbor said i put camera which i only put motion light .. But now i do have camera now around my house but they are still doing it.

i love basil and grow quite an assortment, but my favorite will remain genovese. can't beat the taste with fresh picked tomatoes and a little OO and cracked pepper, not to mention gravy and chicken and pasta and..... as for preserving it, although i will make oil throughout the summer months while the plants are abundant; i preserve it in salt. have a tight fitting container, layer it with kosher salt, then add a few leaves of basil but don't stack or overlap them, then a layer of salt, then basil and so on. make sure the container has a tight lid. you can store it in the frig and use as you need and although the leaves don't have that same texture right off the plant, the flavor is not compromised at all. the salt doesn't seem to take on the flavor, so i just use it as i go along in my cooking. i don't believe it has any taste dried, so i never bother with that method. i recently pulled a recipe off the internet for a basil jelly which i hope to can before the end of the season, when i normally harvest the abundance of mint and do the same. and i am very tempted to experiment with a basil ice cream recipe. maryanne

The scale may be smaller, too. antiquesilver- Thanks for posting your kitchen photo. What a clever location! johnliu- You're right. You can't hang just any old pans up there. I've already starting looking for new pans! bmorepanic- We wonÂt store lots of pots/pans on the wall. ThereÂs just the two of us and we have about 5 "go to" pans that we use frequently (several times a week). We have 2-3 larger pans that we use for larger weekend meals, but they should fit on the wall rack. IÂll measure before deciding on the length of the rack. The larger pots (e.g., stock pots, roasters) are used when we have large parties and during the holidays. They will not be on display. WeÂll store those pots in the pantry we decided not to enclose. (The layout is little deceptive- the wall on the upper left on the side of the hallway is not solid. The door leads to a good sized walk-in pantry). We will also keep our small appliances in this pantry. So IÂm comfortable with the idea that this wonÂt be my only pot/pan storage solution but just for my usual ones. So IÂve taken the plunge and spent most of the morning revising the layout to see if this will work. If I center the range on the wall, there are 42" on either side of it. The question is does this leave enough room for a prep sink. DH loves the having a sink close to the range (I do, too), but based on lots of reading about space between the prep sink and the range, I donÂt know if we have the counter space anymore and maintain the symmetry on the bottom cabs. IÂd like a 15" prep sink. WeÂre going with custom cabinetry so I have flexibility about the size of the cabs but IÂm stuck at how to have a prep sink and keep the symmetry. Just a recap from the previous thread: This is a 105 year old Italianate that also has a butlerÂs pantry, mudroom and formal dining room. ThereÂs plenty of storage and the number one goal for this remodel is improving the kitchenÂs overall functionality. Any suggestions on the revised layout and the wall rack are appreciated.
