One other design,were do you get the supply's to build stairs like this?
I would also like to know about the open floor joist between the first and second floor,what's the best way for insulation in this area,what are the negitives of leaving them open?

Call your local code enforcement office for assistance.

Codes vary from place to place and just because you live in a rural location does not mean you don't need permits and approvals to build your stairs.

For most locations in the US you can go to http://www.stairways.org for help with building code compliant stairs.

The stairs in the original poster's photo, while certainly pretty, appear to violate most codes...since the openings in the guard rails appears to exceed 4"

There is normally no need for thermal insulation between the first and second floors of a house. Insulation is used in the external envelope of a house and not in the interiors.

As to the pros and cons of exposed second floor framing, it's an issue of individual taste. If one likes structure and seeing how a house is assembled, exposed framing can be very interesting. When exposed, however, the framing calls for best workmanship and higher quality materials than would otherwise be used--which doesn't really appear to be the case in the photo above, which looks pretty rough.

The exposed framing, unfortunately, is great for spider webs and other nesting critters, so be prepared to dust a lot and frequently. Over time, dust will collect and may be bad for allergies.

System planning is another challenge. The photo above shows electrical system distribution, but does not show any plumbing, HVAC or other systems such as signal, fire/smoke protection, etc., making the space in the photo appear neater than it may otherwise be without careful planning of system locations and distribution.
