This style of dormer is supposed to be almost all window. Your architect is correct.

This is one of the times where an elevation is the most deceiving. You will always see more dormer in real life, and therefore see more stucco.

Whether or not they are sunken, you'll have to ask your architect. It is hard to tell here.

But, they shouldn't need to be sunken for the style to be correct.

they have a swooped roof, but i don't think they are sunken.

the proportions of the dormers are in line with the front projection on the left of your elevation pictured. It creates an elegant proportion.
