Cased opening where three rooms meet: what would you do?

I'm trying to determine whether to have room openings cased where three rooms meet -- kitchen, office and mudroom. It's an odd corner that would require odd-sized casing widths. It's the only spot in our house where we have room openings without doors.

I much prefer the look cased openings vs. drywalled openings since it looks so much more professionally finished, but I'm afraid that all the different casing widths needed for this spot will look bad.

Any comments or suggestions?
