Roof Pitch

We are planning on building in Eastern Tennessee, not in the mountains, but in the Cumberland Plateau. It does snow there, but there is little or no accumulation. We live in Florida now and roof pitch is a thing of choice rather than need. Our plans call for 8/12 on all roof planes. This pitch allows for 11'6" of attic space which is more than enough. With the minimal amount of snow that is received in the area is 8/12 steep enough for these conditions?
