Persimmon wine, has any one made any?

Has anyone made any persimmon wine on here??
I was wondering because I have alot of persimmons but they aren't ripe yet, how do I ripen them so i can use them for wine??They are in 5 gal. plastic buckets right now.
Also is there an easy way to get all the seeds out???
My husband is really into this wine making, but I do all the work LOL.
Any help will be appreciated.
