Bubbling huh? No clue!! I've always taken my fruit (peaches, nectarines, plums) sliced it up, added sugar or honey and if you'd like spices (cinnamon for example tastes great with pears)or even flavor extracts (vanilla is great with peaches,) put it in a large glass jar with lid and let it sit for a few weeks or even months...then added a very good quality vodka,and again let sit awhile. Strain thru cheesecloth or fine strainer. You could even add grain alcohol.I've mixed up various types, and used different extracts and spices and have had some really delicious cordials. You can also GOOGLE "brandy and cordial recipes". There are a lot of them out there. Good Luck and Enjoy!!

I posted these once before, but here they are again. BLACKBERRY LIQUEUR 2 Cups Fresh Blackberries, picked over and rinsed 1 Cup Sugar 1 Cup Vodka 1 Cup Brandy 1 Cup Light Corn Syrup 1 Tablespoon Fresh Lemon Juice Place Berries in a clean 1 gallon jar and add Sugar. Crush the berries with a wooden spoon and let stand for one hour. Add Vodka and Brandy, cap tightly and shake. Add Corn Syrup and Lemon Juice. Let stand in a cool dark place for 2 weeks. Use a fine mesh strainer to strain our solids and discard them. Rack or filter into final containers. Cover and age one month more before serving. RASPBERRY LIQUEUR 1 1/2 Pounds Fresh Raspberries, picked over and washed 1 Cup Sugar 3 Cups White Zinfandel 1 1/2 Cups Vodka 2 Cups Water Crush the Raspberries and Sugar together in a bowl, let stand for one hour. Transfer to a clean glass gallon jar and add the Wine, Vodka, and Water. Cover tightly and shake gently. Let stand in a cool dark place for 3 days, shaking daily. Use a fine mesh strainer to strain out solids and discard. Rack or filter into bottles, seal with corks and age at least one more month before serving. No BWB or PC is necessary for either one. My cordial recipe combines everything from the beginning. Berries/fruit, vodka, sugar and a little water in a gallon jar. It sits for 1-2 months and gets a shake whenever I think about it. It's chokecherry season again and I'm glad I checked back in here - GW doesn't forward messages anymore for some reason. Thanks Linda - of course, that makes sense. I'm going to use half the sugar. The batch we made last fall was sneakily powerful - so delicious you forget you're drinking nearly pure vodka - makes you feel ready for a winter on the Steppes. Not good to send guests home reeling though.
