CEFreeman: I know that is a common mistake- I'ld like to think that most folks are now aware that above the fridge is the last place you should put your wine. But then again, what about olive oil next to the stove? That's the most convenient place to keep it, and where most folks store it, but exposing it to the heat is also bad for the olive oil. I am keeping my design the way it is, although we tweaked the cabinet so the bottom doors line up with the glass doors above. I've decided that the "crate" wine storage is fine for us- and I like the way it breaks up the cabinetry. No wine drawers available through Medallion, but I'm fine with it.

DO NOT DO IT!! Dry ice is an uncontrollable item. If you need to chill wines (or beer, etc) quickly you should use ice and salt. Just like the old fashioned ice cream maker, the salt will bring down the temperature of the ice. You can control the process by adding more ice or salt as needed. Keep a few cloth towels or napkins near by to wipe the bottles as they are removed so that there will be no trace of salt water to get into a glass. Still the best way is to cool the wine is in a refrigerator. Are you having the wedding in a remote area without electricity? Many years ago I owned a liquor store, and we would put the cases of wine into the walk in cooler for a couple of days. The customer would pick up the cases as close to the party as possible. That way, a little ice would go a long way while serving the wines. DP

Some years ago I had to bake six chocolate jelly rolls for Christmas logs. Only owned one jelly roll pan so purchased the two in one package of aluminum ones at the grocery store to speed up the cooking process. Much to my surprise I discovered the cake cooked much better in these cheap aluminum pans than in my heavy, expensive one. Really made a difference. That's all I use now for jelly rolls. Grease the pan, cover bottom with wax paper and butter it. After baking turn the hot cake out on a bath towel (this gives you a thicker roll) covered with powdered sugar. Quickly remove wax paper, dust roll with more powdered sugar and roll. I allow mine to cool rolled in the towel and then continue the recipe. These inexpensive pans are what I use also when baking foccasia. Works well.

True design flaw. I just replaced a True Residential Ice maker after suffering through two major leaks that destroyed a ceiling and a floor. The True model has a design flaw in the rear drain hose connection that is prone to leaking. True uses a "push to connect" fitting for their drain rear hose vs a more secure and reliable clamp connection. The push to connect fitting will fail over time just from the wear of water running through the line.. Models from Scotsman use the clamp connection. True Customer Service offered no solution other that to ask me to cut the hose and reconnect it. I did this and the unit leaked 4 months later creating additional water damage. I installed a Scotsman SCCG30 and immediately noticed the clamp type connection on their drain hose. I feel much better with Scotsman despite the lack of the fancy lighting that came with the True Model. Unfortunately, I am out of pocket thousands from this "Truly terrible" product experience.
